Hi Susan
I make a great and oh so easy appetizer with jalapenos. (While wearing gloves) cut pepper in half lenth way and then remove the seeds. take some cream cheese and mix it with shreaded hard cheese, cheddar or mozzarella or any type you like. Then put the cheese mixture back into the peppers and cook in the oven at 325 for about 15 minutes. Yum yum

Hi Susan...slice up your jalepenos and freeze them in small bags. There great for jazzin' up homemade soups, sprinkling over nachos, etc. The heat comes from the pith and seeds, so how much you add to your recipe depends on your taste for heat. I make a smokey sausage and chick pea soup with added jalepenos and it's to die for. You'd never know the jalepenos weren't fresh.
