Posted - May 12 2008 : 7:21:39 PM I need your tips in getting more whole grains into a diet. I'm working on easing off the meat a bit, not totally taking it out but I'd just like some other ideas for more options. I'm up for almost anything from main dishes to salads, desserts to breads. I did bake up some great whole spelt apple muffins this weekend, you can check out my blog for the recipe...they are sooooo yummy!

Posted - May 17 2008 : 12:27:54 AM Try the PCC Natural Markets website. Lots of great ideas there. Also, try any of Deborah Madison's cookbooks. She makes vegetarian cooking accessible to anyone, and even carnivores can just add some meat to her recipes. She is one of my Kitchen Deities, next to Julia Child, Nigel Slater, Jamie Oliver, Tony Bourdain, and a select few others.

Posted - May 14 2008 : 6:55:24 PM Well, one of my favorite things to do with whole grains is to switch them up in my favorite recipes. For example, if you already have a rice dish you really like, try making it with quinoa. It's fun to see how the different textures and flavors affect the recipe. You have to be a little careful with millet because it ccan get mushy.
Whole wheat couscous is our favorite (I know it isn't really a grain, but it gets lumped in.) It's high in fiber and it cooks in a snap. Sometimes I just "cook" it in broth (you are really soaking it in hot liquid until it is absorbed). Then stir in some raisins, cinnamon, chopped apple, and a pinch of curry--it is so good!

Posted - May 12 2008 : 7:51:08 PM The Sue Gregg cookbooks are really, really good at covering this topic. I have the whole set and it's worth evey penny. The grains are described and compared in detail, and there are lots of recipes.
