Posted - Apr 24 2008 : 5:07:04 PM I had two chicken breasts that needed cooked so I cubed the meat and browned it in a cast iron pan while I made some yummy basmati rice (yum!!!) I then put the hot chicken in with the rice, added some frozen peas and broccoli, added the "de-glazing" water from the the cast iron, a packet of ranch dressing mix and about a half cup of sour cream. I mixed it together and it made this wonderfully creamy yet tangy sauce. The chicken has a nice flavor with the browning and the veggies are always nice. Yum! Nora is actually eating her veggies tonight and though I don't want to get her hooked on the need for a flavoring for veggies- it is good that she is eating them during this picky toddler stage. And I think the meal probably cost maybe $4 to make and it's enough to feed a big family. I ate one bowlful and am stuffed. I would bet it would feed a family of 6 easily- maybe more if you had other fruits and veggies with it.
