We're moving across the country in a month, so I'm looking for ways to use up as much of our food as possible. This has meant eating a lot of pasta, since we've got a bunch of it and it takes up a lot of space. Add to this a sale on chicken breasts, and I've been making chicken pasta salads with abandon. Here are some recipes I've improvised that I thought I'd share with you. Proportions are relative, so just add everything to taste

Chicken Pasta Salad 1
Salad pasta such as gemelli, cavatappi, rotini, or penne
Pan-sauteed or grilled chicken breasts
Roasted red peppers, cut in small pieces
Grape tomatoes, cut in half
Broccoli, chopped into small florets
Garlic, minced
Salt, pepper, and oregano
Balsamic vinaigrette (Mix together olive oil, balsamic vinegar, and dijon mustard)

Chicken Pasta Salad 2
Salad pasta such as gemelli, cavatappi, rotini, or penne
Pan-sauteed or grilled chicken breasts
Cauliflower, minced
Carrots, grated
Cucumbers, finely diced
Radishes, halved and thinly sliced
Fresh dill, minced
Mayonnaise
Dijon mustard
Cider Vinegar
Salt and pepper
