Posted - Jul 29 2005 : 4:55:28 PM I have a ton of berries(not literally-haha) in the freezer that we picked at one of our local berry farms. I don't use refined sugar and was wondering if anyone knows of a really good jam recipe sweetened with fruit juice?! I'm making strawberry and raspberry jam.
We had a family outing to go berry picking and if you have a u-pick in your area, I would definately try it out. We had such a good time! We teamed up to see who could pick the most berries and my Mother(the rustic cottage)won both times. We're convinced that she has some secret technique!!

Posted - May 05 2006 : 08:06:25 AM I got this book from my library recently: Keeping food fresh : old-world techniques & recipes : the gardeners and farmers of Terre Vivante., Pub. by White River Junction, Vt. : Chelsea Green Pub., c1999.
As I recall, there were sugar-free canning recipes in there.
I think jams made without sugar have to be refrigerated or frozen, but I wonder if they would be okay in a root cellar.
Here's one I found: SUGAR-FREE STRAWBERRY JAM 1 pt. strawberries 1 c. water 1 (4 serving size) env. dietetic strawberry gelatin dessert Crush strawberries and cook for two minutes in one cup of water. Now, mix in one of the gelatin envelopes. Stir until completely dissolved. When cool, pour into three small jars: one for the refrigerator and two for the freezer. Three calories per tablespoon.
