I made this for myself for lunch today, since DH ate leftovers and my brother (staying with us for the summer) won't eat anything healthy. They're fast, and quite yummy!
1.5 cup grated, unpeeled zucchini 2tsp grated, chopped onion 1/4 cup flour (I used whole wheat) 1/4 cup Parmesan cheese (I used more, haha) 2 eggs salt & pepper to taste
Press zucchini between paper towels. Melt 1tbspn butter in skillet. Mix all ingredients together. Spoon batter (2 heaping tblspns) into skillet. Flatten with spatula. Cook over medium heat until browned on both sides. |
