Let's post what we're having for dinner tonight and share ideas for inspiration! I'll start: We're having cheese omelets and banana blueberry bread I baked this morning. I'm trying to use up perishables before Saturday (eggs, bananas, blueberrries). Whats for dinner at your house?

Let's see, the menu for the coming week (including tonight) consists of:

Saturday: Beef Stuffed Soapaipillas
Sunday: Chili
Monday: Chef Salads
Tuesday: Slow Cooker Roast Chicken
Wednesday: Summer Sausage Reubens (A Rachel Ray recipe)
Thursday: Bacon-Swiss Meatloaf
Friday: Hot dogs & Mac & Cheese
Saturday: Lasagna

Next Thursday night, hopefully, I'll sit down & write up the following weeks menu, then do my shopping on Friday. Works best when I do it this way.

We were bad and bought Jack-In-The-Box for dinner. I know I will regret it tomorrow, but this headache wiped me out and Doug didn't want to cook.

Tonight is "Cereal By the Sink" night for me! So named because I stand up and lean in the "L" corner of my countertop, by the sink and eat a bowl of cereal.... Hubby is gone playing music somewhere, and I don't feel like doing much of anything dinnerwise because I'm going to clean some more....and knit, and read and whatever else I feel like doing!

Made my split-pea soup last night, as the hubby & kiddo were at hockey practice till about 8:10 (practice was in town from 6:45 to 7:45, then the time it takes to get the kiddo out of her gear). So, by the time they got home, I was in the process of pulling the meat apart, pulling out the bigger chunks of fat, and pureeing the soup a bit with my stick-blender. We had a bowl of split-pea, and some potato bread, for supper.

Tonight's is Pork steaks & rice-a-roni. Tomorrow will be bratwursts (or cheddar-wursts, just depending on what I grab from the freezer). I'm thinking baked potatoes on Friday, but I'm not sure what we'll have to go with that. Then it'll be time to make a new menu for next week & do my weekly grocery shopping. (This week is semi-off-the-cuff because I forgot to make a menu last weekend.)

It's been raining, windy and grey all day. Perfect weather for a lovely big pot of bean and sausage soup, and sandwiches on crusty sourdough bread. It smells so delish right now.. must be almost ready!

Tomorrow I'm doing a bake-over...

Tonight we had the last of the chicken roast we made on Sunday. But I'm really excited because I picked up some venison loin chops (I think that's the cut?) that I can't wait to try - probably for Friday night dinner.

Last night- Zucchini Chicken AuGrautin & bisquits
tonight- Creamy Chicken Enchillada Crockpot casserole & Salad with homemade fresh ranch dressing
Tomorrow - Vegatarian Lasagna w/homemade tomato herb sauce, swiss chard & nutmeg white sauce layered with cottage & moz. cheeses and lasagna noodles. Homemade w/w bread & salad.

We are ready for a fall menu as well so here is what the family and I came up with while eating lunch yesterday:
Sunday: Salad and Sandwiches (or other warm simple item)
Monday: Mexican
Tuesday: Tofu (and vegetables)
Wednesday: Whatever comes out of the fridge that is leftover
Thursday: Thpaghetti (ok, we couldn't come up with a good TH food but Italian basically)
Friday: Fun night (burgers, pizza)
Saturday: Soup and Sandwiches (or a scasserole)

The kids think this is hilarious and look forward to each night cause they know what's for supper now ;).

I know what you mean, Kati! I've been promising the Irish stew for about 6 days, and it just never worked out--bil's 18th birthday, car problems, whatever.

I finally just bit the bullet and made it yesterday, because it needs the time to simmer. What better soup making day than Sunday!!!

I debated on fixing something tonight, but I think I'll have it again.

Since I work till 9:15 on Monday nights (and don't get home till about 9:45), the hubby cooks. Tonight it's burgers. It's been a few weeks since we last had burgers, so it's sounding good. Last night was supposed to be Split Pea soup (which I've been incredibly hungry for) but seeing as it was also my kiddo's 10th birthday, she wanted pizza, so we ordered in pizza. *shrug* Ah well.... Maybe NEXT weekend I'll get to make my split-pea soup. (I've had it on the menu every weekend for over 3 weeks now, but things keep coming up to keep me from making it. Last weekend it was my sister's suprise wedding & her daughter's birthday party.)

I'm trying to "push" autumn along a little bit (cooler nights, though, so it's on its way!!!), so I made a slow simmered Irish Beef Stew with a few adaptations to use some stuff up in the kitchen (in addition to russet potatoes, I threw in a sweet potato, too). It turned out REALLY yummy, and will probably taste even better tonight!

I for one, am looking forward to dinner already being made when I get home tonight!

We had roasted chicken with veggies and mushrooms. We're out of riesling, so we just basted with a honey-water mixture and it still turned out pretty good. I want something sweet and cakey for dessert, but I don't want to get up and make it-- it's still HOT here so I don't want to turn on the oven...

I do not know why soup sounds good to me today when it is 100 degrees here! But last week I made a chunky pasta sauce with turkey Italian sausage and chunky tomato's, onion, bell pepper, roasted red peppers, and garlic. We had spaghetti one evening, then I froze some leftovers and we had home made pizza. I had a little more left and I had some tortellini in the cupboard so I put the rest of the sauce in the crockpot, added 2 cans of broth, 1 can on petite diced tomato's with garlic and olive oil, then a handful of cut up veggies. I am going to let it cook through the day and about an hour until supper I am going to throw in those dried tortellini they are stuffed with ricotta and spinach. I hope to make some home baked bread and some oatmeal cookies today if I can get to it. My hubby is gone and he is not a big soup fan so we don't have it very often. So we decided to experiment. Who knows? We will see what comes of it.
Have any of you ever put the dried tortellini in the crock pot like that ? I am torn between boiling it and adding it at the very end or letting it cook in the crock pot.

Soup--homemade cream of tomato. Looks like it's going to be a soup diet for at least a couple of weeks, too. Just had a double root canal yesterday, and I AM HURTING. Get my million dollar crowns in two weeks, so the doctor said until then, it's soups.

I've gotten started writing up a menu for the week and sticking to it (and trying to buy & use what's on sale & extra to freeze for later). Tonight's dinner will be meatloaf & home-made (not instant) mashed potatoes. My coworkers who's gardens actually produced this year are passing all their extras on to me. Today I've got a crud-load of zucchini (so I may sautee some of that up to go with the meatloaf & potatoes tonight), carrots, and potatoes. Yummy!

It's "stuffing Pizza" for supper tonight. One of those days when you look into your fridge and see some odds and ends and then look over at your counter and see Zucchini, lol. So this is what I came up with and did a trial run for lunch.

Sautee 1 chopped shallot in olive oil. Add to the pan 2 cloves of garlic, chopped. Season with salt and pepper. Cook til tender.
Dump in leftover diced tomatoes with green chilies( about 1/2 c), but drain off the liquid and save. Toss in enough stuffing crumbs to soak up the liquid that the veggies gave off. Then add to it enough of the remaining tomatoe/green chili liquid to get the whole thing to come together and stay that way. I added in some cheese curd I chopped into small bits.
Next I oiled a large pizza pan and dumped the stuffing mixtured onto it. Using a piece of wax paper, I spread it out nice and thin to cover the bottom of the pan. Peel of the paper and sprinkle on paresean cheese and mozzarella.
Bake in a 425 oven for roughly 20 mintues or until cripsy.

13 bean soup with corn bread! Yum. It was a stormy day here (but no rain ) and it felt like a soup day. So nice to stick it in the crockpot and have dinner done when you come home!!!

I haven't posted here in a while......last night I didn't have to cook. Dh and I had an evening out without kids!! My dd took her brother out for the day and evening (she is 20 and he is 13)so we got to go out for dinner and then to a coffee shop to just sit and enjoy the peace and quiet!!
