Posted - Nov 18 2011 : 10:28:12 PM The tea recipes sound quite nice! I have lemon balm given to me by a friend and now it is literally taking over! It is very invasive. Maybe if I start harvesting it more it will help!

Posted - Sep 22 2011 : 04:18:20 AM Basic Lemon-balm Tea Recipe
Pour a generous cup of freshly boiled water over 1-2 teaspoons of dried lemon-balm leaves and steep, covered, for 10 minutes. Keep the leaves covered to prevent most of the essential oils from escaping.
Lemon Balm on Ice
Makes 10 cups.
10 sprigs fresh lemon balm, including stems, leaves and flowers 8 sprigs fresh orange mint 5 sprigs fresh apple mint
Gently fold the herbs into a large bowl to lightly "bruise" them. Pour 5 cups boiling water over the herbs and allow to steep for 15-20 minutes. Strain into a serving pitcher and add 5 cups cold water and ice. Add sugar to taste. Garnish with fresh lemon balm leaves if desired.

(with fresh or dried leaf) 1 heaping tablespoon of dried leaves or 2 tablespoons of fresh leaves for each cup water Place lemon balm and cool water in covered jar in the sun for a few hours Strain add honey and, or lemon Add mint for a refreshing lemony mint tea

Posted - Sep 04 2010 : 05:13:12 AM Lemon balm is an acceptable substitute for lemon grass in thai recipes. I like asain food and lemon grass won't winter over here in MI. It is good in smoothies too. It is good on fish too. I used to have a lot, but we moved. A pot on the porch will keep the skeeters away too. Used to keep one growing on the porch so hubby didn't get his ankles bit while he smoked. When it grows out into the grass, (it will unless it is contained) it smells good when you mow.

Posted - Aug 03 2010 : 12:50:46 PM If you have rabbits you can feed it to them because apparently they love it. So much so that every time my lemon balm gets nice a full and bushy it gets munched down to nubs by the wild bunnies LOL!

Posted - Aug 03 2010 : 09:42:44 AM In my herb garden in New Jersey I had an abundance of lemon balm. I used to pick bunches of it to stuff inside the cavity of chickens as they were roasting. Lemon scented chicken - mmmm! |
