Just curious what everybody else is busy canning, I did my famous "everything" relish today, so far 36 1/2 pints. I never have enough cucumbers to make pickles so I take what I have and add all the vegies I can find and make sweet relish enough for all. I love to can

Tania ~ I've got tons of green fabric - prints and solids and I have some textures - silk, flannel, etc. If you would give me an idea of what you're willing to part with, I'll let you know what I'd like. This is fun! Thanks! Patricia

Your kitchen sounds like mine: Smell of the day! The salsa I did a couple of weekends ago perfumed my house. I am doing applesauce today. Two bushels of apples need to go down. I am also going to do pie slices when the criterion apples come on. I think I am just going to do them in syrup and then add everything later. Keep it up girl! I know I start to tire about now. If I can just keep ut the momentum.

I did nectarine jam today...sure a different smelling kitchen than yesterday..which was a salsa and dried tomato day!!!

I got my green beans canned today. About ready to make some more salsa, but darn those deer, they are picking my tomatoes and eating them. They don't even eat the whole thing. Tonight I barracked the tomatoes in hopes (yeah right) they will leave them alone.

Oh Patricia..I am a sucker for tote bags..what would you want?? I would love to see pictures!!
Diane..when I do pie filling I use a recipe from Putting Food By..it is for apple pie filling but works for peaches too..I just adjust the spices a little for me
Pie filling
4 1/2 cups sugar
1 cup minute tapioca
3 Tbsp lemon juice
1 tsp cinnamon
1 tsp salt (optional)
1/4 tsp nutmeg
a dash of allspice
10 cups water
16 cups of sliced peaches
stir together all the dry stuff first in a really big stock pot and then add water...and cook on med high heat. stir and cook until thickened and bubbly then cook an additional 2 minutes. Add lemon juices, and then add the peaches to the sauce. Stir constantly and bring mixure up to a rolling boil and cook one minute. Promptly ladle into quart jars leaving 1/2 inch headroom. Process in boiling water bath for 25 minutes.
a quart is just enough for a pie.
this makes 7 quarts usually.

Would any of you canning divas be interested in swapping your canned goods for a tote bag? I design and make tote bags for my daughter's company, Snackee. They're one of a kind, roomy, reversable, and made of cotton and dupioni silk. Some have pockets, some don't. There are also some wallet size and dressy silk purses. We used to sell them to boutiques in Los Angeles when we lived there. Since we moved here, my daughter has been too busy settling in to do any marketing. I can send photos if anybody is interested. I am drooling with all this talk of home canned goodies. I also have some books, paper art books from Somerset Studios and fabric to swap. Oh, and one new jogging suit size XXL, blue and white, never worn.

Aunt Jenny, I have two questions for you (who better to ask than you?)!! How do you make your canned pie filling? I have always wanted to make pie fillings.
Secondly, when you made your green tomato relish, do you use pickling vinegar or regular white vinegar? My recipe doesn't specify.

Today I will can up some salsa and maybe some green tomato relish or slices..it was a big peach day yesterday! My whole kitchen table is full of quart jars of peaches and peach pie filling ready to take down to the cellar. I love it!!

Dilly beans made. Canned green beans tomorrow. Has anyone ever heard of adding lemon juice or tomato paste to canned green beans to give some acidity?

By, the way, it just occurred to me. Wouldn't it be great if we could all get together at the end of Harvest, maybe at the end of October, and share the products of our labors, maybe do some quilting, play some music, exchange fabric and squares, mail art, and just have a great day? Boy, I can dream. I promise, when win the lottery, I'll send all my farmgirl pals a plane ticket and we'll do it! I'm always asking my guides why I don't win the lottery and they tell me, "What do you want from us? You never play!"

Stu and I put in our first garden this year. We're garden virgins and we're learning and loving it. We got tons of grean beans and cukes and a million tomatoes that won't get red One of the farmers at the Farmers Market said everybody has been having that problem because we had a lot of rain early in the season. I'm still hoping, but we have taken to bringing in some tomatoes and ripening them in a brown bag with other red ones. It's a slow process but it works. Anybody have any ideas for green tomatoes? We are thinking of canning but don't know a thing about it and are a little afraid of blowing up the kitchen and us with it. Stu makes a great pickled cucumber and onion thingy (all those years in England paid off) which we're putting in the fridge with our cukes to give away at Christmas. A client of mine also gave us a bunch of cherry tomatoes from her garden that she didn't know what to do with. Stu cooked them down and strained them and made the best tomato soup with a little olive oil and some basil from our garden. We brought some to her along with some of his pickled cucumber thing and some chocolate chip and walnut cookies he made and boy, was she surprised! Would't it be great if we could all meet at the end of the harvest and exchange our goodies? Sigh.

Just finished 5-1/2 bushels of peaches with my girlfriend over the weekend. I'll be doing pears today and applesauce tomorrow. It is so much more fun to can with a buddy. I you don't have a buddy, convert girlfriend to canning and hopefully you'll have a canning buddy for life.
