I was able to share my excess dried leaves with other farmgirls, and started two large batches of Lemon Balm Tincture. That tincture will be ready in 6 weeks. If anyone would like more leaves, I can probably harvest and dry them again in another couple of weeks. Just send me an email and I will let you know when it is ready. ---------------------
I have a BUMPER crop of Lemon Balm this year, and I harvested the leaves last week to start a batch of Lemon Balm Tincture. (See Farmgirl Connection cookbook for the recipe, or search Herbal Wisdom for the recipe posted by "Kathy of the Enchanted Wood".
At this writing, I have four quart size mason jars filled with dried Lemon Balm leaves, way, way more than I will need for my tinctures or for cooking purposes. Lemon Balm can be used to make or flavor hot tea or iced tea, salads, or anything else that needs a little lemon lift...or to make this wonderful tincture referred to as "The exlixer of life".
Does anyone want to barter dried leaves for different herbs from your garden, or for cookbooks?

Posted - Jun 28 2008 : 07:10:04 AM I grow lemon balm also and take a leaf or two and rub directly on my arms and legs when working in the garden, keeps the nasty biting mosquitos away.

Posted - Jun 24 2008 : 1:38:09 PM Hey Jo, I'm using the dried lemon basil in olive oil as a marinade for veggies and the cinnamon basil is used in my Thai cooking..it definitely has a cinnamon-y flavor...very interesting and different.

Hey Jo, do you have any more left? I am starting to dry cinnamon basil, lemon basil, chocolate peppermint, and regular peppermint and might want to trade. It'll take a few days for the plants to dry; I am hanging them upside down, but let me know if you are interested in any of these

Lemon Balm is an herb, related to the mint family I think, but it has wonderful properties for use in recipes or herbal remedies. You will find it listed in any herb book, along with suggested uses. It's also a wonderful ornamental plant, which is how I used it for about 12 years before I realized the health benefits from a fellow farmigrl posting here on the Farmgirl Connection.

I've picked out a couple of recipes to try...first one will be Chicken Breasts with Herbs stuffed under the skin. Yum...

You should either pluck the leaves or take the whole stalk, depending upon the quantity (the more to pick, the faster it is to cut the stalks and then pull of the dry leaves later. Either way, try to harvest leaves in the early mornings. Lay the stalks out flat, don't stack them on top of each other. Individual leaves can be picked and put into a bowl or laid out on the counter, and "sifted" periodically to stir them around as they dry. Depending on the temperature and humidity, this takes a couple of days. The leaves will turn a bit darker green/brown color; that's okay. I will e-mail ya some recipie ideas sometime later on this week...in the meantime...check out the internet. Strawberry leaves are like raspberry leaves...very astringent, helps with bleeding (like Yarrow does). Violet is very high in vitamins A and C and is a wonderful tonic herb.

Sheila, I still have two bags of dried leaves - one is spoken for - these are quart-size Ziplok bag of dried leaves...just send me an email me with your address.
As for cookbooks, I'd be interested in almost anything, crockpot/oriental/italian/american cooking, or just about anything else (probably not vegetarian or diet/lite versions, though).
