Does anyone here drink this or make it themselves? I had my first experience with it recently. I was told not to drink more than a couple ounces of it at a time. I've been drinking it now for three days and everytime I drink it I get light headed...almost like I've had wine. Anyone else experience this?

Most refrigerators don't get cold enough to kill the culture, just sort of hibernate it. So yes, sitting around a new SCOBY will form. Folk who sell them regularly will have a bunch of small jars all sitting around with kombucha so they have a regular harvest of SCOBYs. And I just use my hotels for new SCOBYs. Sitting there holding my extras, new ones still form. It's very self propagating!!

Where is rain? It's not here yet. It's getting a little cloudy but no rain yet. I am still hopeful and waiting. I am all ready for it.

I'm glad the kambucha is doing so well for ya'll. I need to make more now myself. I think I might take some pint jars and pour a little tea in them and see what happens.

Have ya'll been overtaken by fruit flies yet? I hate those darn things. I can't keep fruit out at all in spring, summer or fall. And they love hanging out on the cheesecloth if it gets any tea on it.

I put my 1st batch in the fridge. It tastes great, kind of a sweet, tart cidery taste.
I am making a 2nd batch in a half gallon jar.

I made a discovery this morning. I am the worst one for pouring a glass of something and forgetting where I put it and getting another. So I find glasses of old milk or tea or stuff all over the place. Well, this morning I went out on the side porch and there was a glass of Kambucha about 2" full. I noticed something white on the top and it's a little thin baby! I had no idea it would make babies after being in the fridge. So that's a good way to get lots more babies for friends or to sell. I will make some and try to sell at the market when I start going.

Lisa and Sherry, I hope ya'lls are doing good.

Homemade is the best by far. I just can't seem to make enough of it for my DH and I. I have used a number of types of tea. Pomegranate Green, Lemongrass green, morning thunder, I have an earl grey and a strawberry kiwi peach brewing right now. Tomorrow I am going to a class on fermentation. I can't wait!!!!

Kris, it smells good. I am looking at it each day & smelling it. I haven't tasted yet though. Thanks again for my little Chickamauga Scoby. You are a sweetie
kristin sherrill Posted - May 11 2010 : 7:45:24 PM
Lisa, it will have some stuff hanging around the bottom. Kind of dark stuff. I think it's part of the scoby that comes loose. It doesn't bother me and I do drink it. But you could strain it if it bothers you. It's just part of it. And the color could be the tea. How does it smell? It's only been 5 days so far.

Monica, I am no expert but it's a fermented drink. I call it a mushroom but really it's a scoby. No idea myself what it it. I just love it and have been drinking it since last fall. If you want some email me your address and I'll send you one.

Maybe it's what the Baldwin Sisters brewed in their basement! Just kidding with all of you! never heard of this stuff, makes me feel so out of the loop! Why, I'm going to have to pay a visit to my local health food store! Anything to get rid of these cankles!

Hey Kris, mine looks OK, getting darker maybe. Is it normal for the scoby to get webby? stuff on it?
I haven't tasted it yet. I am waiting until it is good & strong!
kristin sherrill Posted - May 11 2010 : 4:12:29 PM
Sherrye, I let mine go at least 2 weeks here. But it really might depend on where you live as to how long it takes to ferment. Just taste it after a week and see if it's a little fizzy. You'll just have to experiment with it. I am glad you got it ok. And I will get you some soap in the mail. I need to write me a note now!

I think I am going to give Kombucha another try. Although I think I will wait a few more months until I am finished nursing Truman. One of my friends could probably give me a starter, but if not, I'll just send Kristin an email :)

You know Kristin, if you cold brew your coffee it has a much much lower acid content.
