If you don"t have enough of one thing to fill a hot water bath canner could you finsh filling with a different vegetable, if the processing time is the same

Just finished canning some green beans in a pressure canner. I had one pint left so I placed a hand towel in the canner so it would way down the plate and circled the towel around the last jar to keep it from rattling around.

Not to worry it is just tomatoes and hot lemon peppers, but thanks for your concern. I just started canning again after about a 25 year break, so all the reminders are helpful! My ole brain just isn"t what it use to be lol! Roxanna

I hadn't thought about that... I thought you meant that these were all foods that need to be water bath canned for the same processing time. Never even occurred to me that you might be canning different foods that require different processing methods! Eghads - I'm sorry!

Roxanna . . . I echo Mary Beth's comment about pressure canning vegetables, rather than water bath canning.

I picked up on something in your question Roxanna and I wanted to clarify in my mind...you aren't processing veggies in a water bath are you - I mean, unpickled veggies? All vegetables must be pressure canned. Fruits, jams, fruit butters, pickles and tomatoes (which are considered a fruit) are water bath canned. Just wanted to double check that I didn't misunderstand for safety's sake.

I will also use a smaller pot to process in. I have a canning pot, but use my different sized stock pots as well.
