Posted - Aug 02 2011 : 1:42:06 PM I have frozen about 30 green peppers today. Phew! Can I thaw these later to make my canned salsa or do I need fresh green pepper? I never had enough peppers to freeze (or dry) until this year.

Posted - Aug 24 2011 : 5:52:54 PM I freeze stuffed pepper soup at our houseI would use 5-6 green peppers per batch, paired with sourdough bread almost always the entire batch was eaten.

Posted - Aug 24 2011 : 11:09:57 AM I am interested in hearing MORE about those corn muffins, with carrot and pepper! Care to share? I have frozen stuffed peppers before, after I baked em and they were still very good when I unthawed them again. Trick of course have a good texture going on in there and the pepper just holds it all together. Of course youll love that peppers flavor, and theyre very edible. I say go for it!

Posted - Aug 05 2011 : 05:23:56 AM I love to freeze tons of green peppers and use them all year long. . .so many recipes it doesn't matter if they're "mushy" because when you cook them/bake them they get that way anyhow. Just doesn't help with the salsa issue, but you'll be glad you have them, I'm sure! Plus they're so easy to chop up when they're frozen!

Posted - Aug 03 2011 : 08:53:58 AM It does suck when your stuff isn't ready at the same time! My cilantro was ready WAY before my tomatoes! I had beautiful cilantro plants, but will have to buy it to make salsa anyway!

Posted - Aug 02 2011 : 2:43:21 PM Kristina, Definitely for soups. I usually dehydrate a lot of green peppers that way when I throw them in the soups they come back. I'm not a big frozen veggies eater. Most are too rubbery to me.
It's tough when all your ingredients aren't ready at the same time.

Posted - Aug 02 2011 : 2:41:29 PM That's what I thought. I'm trying to convince dh that I can use them for soups, stews, baking etc. I just made corn muffins with my garden carrots and more green pepper. Yum!
