My peas aren't quite ready yet (I do have lovely white blooms, so we're getting there) but I want to make the most out of my harvest (some fresh, some frozen). Freezing: I've read that you boil them for two minutes, then plunge them into an ice bath for 5. Dry them off, bag them up. Is this about right?

Also, aside from just peas with butter (which I love) anyone have any good recipes to share?

I love peas fresh and uncooked from the garden in tuna-mac salad. They're so sweet! I'm glad you saved your mesh bags, Jonni. Using a slotted spoon is ridiculous and dumping your hot water into a sieve and having to start over is just as rediculous. Much more control and much faster this way.

That's a great idea (about those mesh bags. I've got several hanging around right now. I'm not all that "coordinated" so the idea of timing and getting boiling peas out with a slotted spoon seems a bit daft (for me). Can't wait to get going on this!

I love peas in my salad, too. I also found a recipe for a romano cheese penne and peas. Yum. I'm ready!

I love nothing better than cold peas on my salad. Can't beat it- going to grow many this summer and freeze.

I save those mesh bags that onions and turkeys come in and use those for blanching my veggies for freezing. It's easier to fill the bag with you peas (or other veggies) drop it in the boiling water, wait for the water to return to a boil and count 2 minutes. I then pull the bag out and set it in a large bowl in the sink and let the cold water run for a minute or two. Pull the bag and allow to drip dry then dump them into freezer bags and freeze. While the one bag is cooling in the sink I have the next one in the boiling water. Works very well for me as long as I can keep my family from gobbling them up before I get to them!
