Yes, despite its name, buckwheat is not related to wheat and is thus gluten-free. Buckwheat is a flowering plant grown for it's seeds and as a cover crop. It is high in protein & fibre, & also carries some antioxidant properties.

I probably wouldn't use powdered sugar. I don't think the texture would be quite right for this recipe. Caster sugar isn't as fine as powdered sugar. It's more liked fine granulated sugar. In Australia, we refer to powdered sugar as icing sugar.

Caster sugar is really fine sugar. You could pulse granulated sugar in a food processer for a few seconds.

I will start baking this coming Monday. Kolaches, several different kinds of cookies- snowball, chocolate crinkle, chocolate chip and butter shaped into trees and wreaths. These will be gifts. Pictures later.

Denise, I made the GF cranberry cookies yesterday and they turned out delicious!! Easy to make as well. Thanks for sharing your recipe. it is a keeper form me now.
