It's that time of year when our kitchens are busy and filled with good smells. I deep cleaned my kitchen in preparation for some baking. We will have a small group of teens here on the 8th for appetizers. It starts off the progressive dinner they are having. I won't be baking those ahead but it helps to get in the mood. I will be making fudge and a couple different types of cookies for our caroling party and to enjoy over the holiday. I haven't decided on the cookies but one type will be gluten free. We have a few that can't have it. The gf will be cranberry and white chocolate chip.
What are your favorites to bake for the holidays?

The cookies made every year in my family were Bourbon Balls, Sherry Butter Nut Cookies, and frosted Sugar Cookies. We also added others.

I have an entire binder my mother put together of all the cookie recipes she had. She cross-indexed them by Type of Cookie (bar, rolled, foreign, etc) and Alphabetized. She was definitely an over-achiever. LOL!

If you've been looking for a cookie recipe, let me know - I probably have it!!

Oh Denise, my favorite time of the year, always like trying out a new Christmas cookie recipe. Or fudge or pound cake.
I have my Christmas recipe book and my mothers and my granny's. I look for recipes for Christmas all year long. My hubby and kids have their old favorites that they like for me to make, Pumpkin roll, Graham cracker roll, peanut butter and peppermint fudge. Ms. Joy pound cake. Sound like fun to see what everyone else's favorite is.

It was always a family tradition growing up in Australia to have Pavlova & Plum Pudding with custard on Christmas Day. It was always a boiled plum pudding. My Grandmother made the best plum pudding. I might get my cloth out and try making one again this year. I'm always afraid that I will undercook it in the middle - then, of course, I end up leaving in too long & over cooking it. It's hard to get it just right!!

Jenn,
The couple that do our teen Sunday school set it up. They will ask three families to host. One family does appetizers, one does the main meal and one does dessert. They will start at 6pm with the first family and I don't know how much time they spend, maybe a half hour then they leave their home and go to the family serving the next course and then when that is finished they go to the last one. It is from 6pm to 8pm for our group. There are only 6 teens and the two teachers.

We did a progressive at our last church. It was open to everyone. We had so many sign up that they had 9 families who did the 3 different parts. They divided us in to 3 groups. I don't know know how many were in a group. Maybe 10 people or so. It was so much fun!

I made my gf cookies today. Cranberry and white chocolate chip.
Can't really tell a difference in the taste.

Here you go Cindy!

Ingredients
2 ¼ cups gluten-free flour, like Cup4Cup
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened to room temperature (use dairy-free if needed)
¾ cup granulated sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups of white chocolate morsels
2 cups dried cranberries


Instructions
Preheat oven to 375° Fahrenheit. Line a baking sheet with silicone mats or just keep them ungreased if you don't have any. Remove butter from the refrigerator so it has time to come to room temperature - you want it to be very soft.

In a small bowl, whisk together the gluten-free flour, baking soda, and salt. Set aside.

In a stand mixer, cream together (mix) the granulated sugar, brown sugar, butter, and vanilla until creamy, over medium-low speed. Add each egg, one at a time, and be sure to beat well after each addition.

Lastly, add in the flour, on low speed, until everything is incorporated. Using a large spoon, stir in the chocolate chips, cranberries, and chopped walnuts.

Using a tablespoon for size or an ice cream scoop, drop rounds of cookie dough onto the baking sheets, leaving 2 inches between each one.

Bake for 9 to 11 minutes or until golden brown. To ensure more crispiness and golden brown color, leave in for 11 minutes. Cool on baking sheets for 5 minutes; remove to wire racks to cool completely.

I used King Arthur gluten free all purpose flour. It can be found at Walmart.

Thanks for the recipe, Denise. I'll give them a try next weekend when I do some more holiday baking. I made a Gluten-Free Chocolate & Raspberry Brownie for my husband's family Christmas party on Saturday and it was a hit!!

Gluten-Free Chocolate & Raspberry Brownies

150g butter
150g dark chocolate
1 cup coconut milk
1 1/4 cups caster sugar
3 eggs, lightly beaten
1/2 cup gluten-free plain flour
1/2 cup buckwheat flour
1/4 cup cacao powder
125g fresh or frozen raspberries

Preheat oven to 180C/350F. Grease an 8-inch x 12-inch rectangular pan; line base & sides with baking paper.
Combine butter, chocolate and milk in a medium saucepan over low heat; cook, stirring, for 5 minutes or until butter and chocolate are melted and mixture is smooth. Remove from heat; stir in sugar. Cool for 10 minutes.
Beat eggs into chocolate mixture with a wooden spoon. Stir in combined, sifted flours and cacao. Gently fold in half the raspberries. Pour mixture into pan. Sprinkle with the remaining raspberries.
Bake for 40 minutes or until a skewer inserted into the centre comes out clean. Cool in pan. Cut into squares.

I've not seen caster sugar. What makes it different?

Is it still gluten free if you use buckwheat?

Caster sugar is a finer sugar that we have in Australia. Fine granulated sugar is basically the same thing - that's what I use over here in the U.S. in substitute for caster sugar. To be honest, you could use any sugar in this recipe & it would still work out. You could probably even use coconut sugar if you wanted to. Happy baking!!

Is Caster Sugar like our Powdered sugar? I know of some recipes that use it instead of sugar.
