Friendship Bread Starter: Put in a gallon jar with lid. ( I've always used the jar but wonder if a gallon bag could be used.) Day 1: Put in jar 29 oz can of peaches, cut up, with syrup, 2 1/2 cups of sugar, 1 pkg of active dry yeast (not fast acting) Stir together, put lid on jar
Days 2-9: Stir once a day with a wooden spoon
Day 10: Add 2 1/2 c. sugar, 1- 20 ounce can of crushed pineapple with juice. Stir lightly, replace lid.
Days 11-19 Stir once a day
Day 20: Add 2 1/2 c sugar, 1- 30 ounce can fruit cocktail with syrup, 1 jar maraschinos cherries, cut in half. Stir lightly, replace lid.
Days 21-29: Stir once a day, replace lid.
Day 30: Starter is ready to use. Drain fruit, reserve the liquid. Divide liquid into 3 containers. Give two to friends with this recipe. Do not use yeast in this starter again.
For bread or cake: For each batch you will need: 1- 18 to 18.5 ounce yellow cake mix. (Non pudding type) 1- 3.4 ounce box of instant vanilla pudding 4 large eggs 2/3 c. oil 2 tsp. vanilla extract 1 1/2c. drained fruit from the starter 1c. walnuts, optional. 1c. raisins, optional. Preheat oven to 350 degrees. Grease and flour pans. In large bowl mix: cake mix, pudding mix, eggs, oil and vanilla extract until well blended. Stir in drained fruit, walnuts and raisins. Pour into pans filling 2/3 full. Bake 50- 60 minutes or until toothpick inserted 1 inch from edge comes out clean. Cool in pans for 20 minutes, remove from pan. Now you can gift a friend with a loaf, starter and recipe for starter, omitting yeast. |

Good one for the upcoming month's holiday.
I have a favorite I use often for Irish Soda Bread
Serves 8
Ingredients: 3 1/2 c. all purpose flour 2 tbsp. caraway seeds (optional) 1 tsp. baking soda 3/4 tsp. salt 1 1/2 c. (about) buttermilk
Preparation Preheat oven to 425 degrees Lightly flour a baking sheet. Mix flour, caraway seeds, if using, baking soda and salt in a large bowl.
Mix in enough buttermilk to form moist clumps. Gather dough into ball. Turn out onto lightly floured surface and knead just until dough holds together. About 1 minute. Shape dough into a 6-inch diameter by 2-inch high round. Place on prepared baking sheet. Cut a 1 inch deep X across the top of bread, extending almost to edges. Bake until bread is golden brown and sounds hollow when tapped on the bottom, about 35 minutes. Transfer bread to rack and cool completely. Enjoy! |

Today, I saw on a blog a recipe for making your own Jiffy cornbread mix if you don't have a box of Jiffy in your pantry.
2/3 C regular flour 1/2 C yellow cornmeal 3 Tblsp. sugar 1 Tblsp baking powder 1/4 tsp salt 2 Tblsp vegetable oil 1 egg 1/3 milk
Preheat oven to 400 degrees. Mix all dry ingredients together. Add oil, egg and milk and mix until slightly lumpy. Let rest 3-4 minutes. Put is baking pan or muffin tin and bake 15-20 minutes.
Recipe says, if you already have a yellow self-rising corn mix that contains flour, just use that and add the rest of the wet ingredients.
I am going to try it out soon asI always love Jiffy cornbread. I often make it at holidays and let it dry out a few days and then use as the base for cornbread dressing. |

Banana splits for breakfast. Just use yogurt instead of ice cream. Add fresh fruits to your liking, top with granola and/or nuts.

Here is a Low Carb Keto Cheese Bread recipe I saw today. This sounds very good.
Keto Cheese Bread This keto cheese bread is made with a simple and yeast-free dough and topped with plenty of melted cheese! Made with just 5 ingredients, it takes less than 10 minutes to make! CourseAppetizer CuisineAmerican Prep Time2 minutes Cook Time10 minutes Total Time12 minutes Servings16 servings Calories192kcal AuthorArman Ingredients For the dough 2 cups almond flour 1 tablespoon baking powder 3 cups mozzarella cheese low moisture and shredded 2 ounces cream cheese softened 2 large eggs For the topping 1 cup mozzarella cheese 1/2 cup parmesan cheese freshly grated 1/4 cup cilantro to serve Instructions Preheat the oven to 200C/400F. Line a large baking tray with parchment paper and set it aside. In a small bowl, whisk together the almond flour and baking powder. In a microwave safe bowl, combine the mozzarella cheese and cream cheese and microwave in 20-second spurts until warm. Whisk together until combined and smooth. Transfer the melted cheese into a food processor with a dough blade attachment. Add the eggs and dry ingredients and blend until the dough is smooth. Roll out the dough into a large oval shape. Sprinkle the shredded cheese on top, leaving ½ inch around the sides. Bake the cheese bread for 10-12 minutes, until the cheese is golden brown. Sprinkle with chopped parsley and slice lengthways. Notes TO STORE: Leftovers can be stored in the refrigerator, completely covered, for up to 5 days. Be sure there are no air pockets whatsoever as the bread can go from soft and fluffy to dense and hard very fast. TO FREEZE: Places slices of the cooled cheese bread in a ziplock bag and store it in the freezer for up to 6 months. TO REHEAT: Microwave the bread for 20-30 seconds or reheat in a preheated oven for 5 minutes, until the cheese is melty. This came up today on FB and it sounds good! Neiman Marcus Cake Ingredients: 1 box cake mix, any flavor 1 stick butter 2 eggs 1 cup chopped nuts ICING 1 (8-ounce) package cream cheese, softened 1 (16-ounce) box powdered sugar 1 egg Directions: Blend cake mix, butter and eggs. Mix in nuts. Then spread batter into a greased and floured 13 x 9 pan. Mix all ingredients for icing together. Then pour icing on top of the cake batter. Bake at 350°F for 45 minutes.

I found this list of Emergency Substitutions very helpful. *Another substitution for buttermilk is to add 1 Tablespoon of white vinegar to a 1 cup measurer and then fill the rest of the cup with regular milk. Stir and let sit 5 minutes. *A good substitution if you are baking and run out of oil is to replace the exact same amount of oil with applesauce.
