February is already here!! Let's keep on working on those badges from January we didn't finish...and lets work on February's list together! We're still in the kitchen...Farm Kitchen (Get it Together, Unprocessed Kitchen, Cheesemaking). Let's all share what we're doing...how we're doing it...remember, even just one badge is great! Do what you're able to.

So far, I have made 3 of MJ' chillover recipes. I'm not a huge fan of anything "jelled" or "congealed"...or whatever. I made the Brownsugar chillover from her big book. I think I whipped my cream too long. It had a decent flavor, like caramel and whipped cream. I wouldn't make it again, though. I made her chocolate chillover from the kitchen magazine and it was really good. It was made with coconut milk. It's really rich, though but yummy.
I had got a bunch of fruit at Costco last week and decided to make a small batch of mixed berry jam using her chillover powder. I thought that might be a better way to use it. It turned out really good! Uses WAY less sugar and has a good taste and set up nicely.
I have to make 3 recipes and then I will be finished. I'm not sure that I will be a chillover fan, though....
I'll post my recipes on here when I get them finished.
I enjoyed doing the Get it Together...my baking cupboard could probably stand a little re organizing!

I have been using MJ' Chillover powder for a couple years now. I buy it in bulk - I use it in replacement of geltain (so all my canned pie fillings and jams using chillover) and I also use it in replacement for jello. I make a jello salad of cranberry sauce and applesauce, with some crushed pineapple. I'm always thrilled when using the chillover - seems so much healthier without the sugar...and the natural product!

Those sound good, Joyce! I'm having a hard time trying to figure out the ratio of liquid that you bring to a boil and then after. All of the recipes that I've seen seem to be different and there doesn't seem to be a standard ratio. What have you found that works best for you?

for the jello or for jam Debbie? I use the ratio that MJ suggests in the booklet that comes with the chillover powder. I may adapt a bit - but that's what I always use.

For the jello. I had good luck with the ratio for the jam. When you use it in pie filling, how much would you use per batch? My pie filling recipe uses cornstarch.

I'll look it up in my book and get back to you. I don't use cornstarch anymore because it doesn't hold together while baking again...and so I was using clearjell.

So can you use the chillover with a 1:1 ratio for gelatin? I too am struggling with finding uses for it!!!

For pie filling, I use the same amount of chill over as cornstarch. For jello, I use 2 tsp. For 3 cups of liquid.

So tomorrow I am trying another chillover recipe. I'll let you know how it goes...

Does anyone have an extra copy of the books that come with the chillover powder or the GF baking mix? My kids decided they were trash!?!?

Shannon, are you talking about the little pamphlet/paper that came in the chillover package? If so, I will put mine in the mail to you today.
I am finished with my 3 recipes. Hopefully I will have them posted on here by the end of the weekend. Whenever I think/hope it's going to be a quiet few days, I get another surprise! I'm hoping for a quiet weekend!
