The chili turned out great and pretty. My neighbor liked it and said another neighbor would really like it so I sent a bowl to her. I'm posting the recipe I will summit for contest. I want y'all to be my editors. I need to know if it makes sense to you and is it easy to follow. Would you make this chili?

Sara’s Zucchini & Red Bell Pepper Chili
With Cranberry Beans


Beans:

1 cup Rancho Gordo Cranberry beans – cook per package directions
3 fresh sage leaves - optional
1 tsp Rancho Gordo Mixteca Cooking Salt - optional

Chili:
2 Tbsp Olive Oil – more as needed
1 Sm Red Onion – chopped ¼ - ½”
4 Garlic Cloves - minced
2 Tbsp Tomato Paste
¼ cup Red Wine
1 Tbsp Apple Cider Vinegar
2 tsp Worcestershire Sauce
1/8 tsp Liquid smoke – optional
1 Lg Zucchini – chopped ½” – 4 cups
1 Lg Red Bell Pepper – chopped ½”
3 Jalapeno Peppers – seeded - fine diced
2 tsp Kosher Salt – or to taste
1 tsp Black Pepper – or to taste
4 Tbsp Ground Cumin
4 Tbsp Chili Powder
Red Pepper Flakes – optional
1 tsp Dried Mexican Oregano
3-4 Fresh Mexican or regular Oregano leaves
3-4 sprigs Fresh Cilantro
1-2 Tbsp Masa as needed to thicken
Liquid as needed – bean broth or dark beer or water

Prep the vegetables – measure out all ingredients. To build flavors in a vegetarian dish add some of the seasonings/herbs along as you add vegetables. You are layering flavor. Add olive oil or liquid along if needed. Dried herbs are added as you cook and fresh herbs are added in the last ten minutes.

Step 1: Put 2 Tbsp of olive oil in heavy 3-4 qt Dutch oven. When hot add red onion and sauté for 5-8 min. Add garlic and sauté 1 min.
Step 2: Clear a spot to add tomato paste to. As the tomato paste turns brown add Worcestershire Sauce and Liquid Smoke. Combine with onion and garlic.
Step 3: Add zucchini and season with ½ of salt, black pepper, cumin, & chili powder. Add all dried Mexican oregano. Cook until zucchini is tender. If needed add olive oil or liquid.
Step 4: Add red bell pepper and jalapeno peppers with reminder of salt, black pepper, cumin, & chili powder. Cook until tender.
Step 5: Add fresh cilantro & Mexican oregano – cook a few minutes.
Step 6: If needed add 1-2 Tbsp Masa to thicken – cook 5 -10 minutes to desire thickness and the raw taste of Masa is gone.
Step 7: Add the cooked beans. If the chili is the consistency you want don’t add bean broth with the beans. Cook together for 10 min to mesh the flavors.

Serves six

Thanks Linda. Hope the itchy rash is better.

I looked over the recipe really good - added something I had left out - and sent the recipe in. They will choose the top several recipes out of each category to prepare and then choose the winners. It would be a feeling of accomplishment just to have my dish prepared.

Darlene, sorry I overlooked your post. Thanks for your sweet words.

Received confirmation my recipe is now officially entered. The contest will go to June 1 and winner announced on June 9. Now all I have to do is wait.

Sara, you recipe looks delish! Would you believe that I have never heard of Rancho Gordo Cranberry beans? Must come from living in New England! lol

One of the cooking techniques I've noticed in my craftsy classes it how the chef's cook onions (and garlic). The chefs would add the olive oil (whatever fat you are using) and onions at the same time, turn on the burner and cook. The idea was that you did not want to cook the onions too quickly, as they would become bitter. If I understood correctly, it was about slowly releasing the flavour. You do the same with garlic. I will attest that overcooked garlic is bitter! Have you heard of this Sara?

Sara, I have to agree.

I do enjoy a good cookbook with lots of pictures and stories to go along with the recipe. Some recipes are just horrid to follow! If I like the recipe, I'll re-write it the way I would follow it.

Carole, Rancho Gordo is the company I buy heirloom beans from. Gordo is the owner. In the recipes I receive from him he always adds Rancho Gordo to an ingredient if he sells it so I thought I would do the same. Yes, dark or burnt garlic is horrible. I always add garlic to something else. As soon as you smell the garlic you can add the next ingredient.
