Hi all :) Jubilee is quickly approaching... and as it is the Year of the Rooster, what better to share than recipes for chicken/roosters!?!? Do you have a favorite recipe?

Tonight I am planning on taking one of our favorite casseroles - a loaded baked potato buffalo chicken casserole, and turn it into a bakeover. If it works well, I'll share the recipe in the near future :)

Wow, Shannon, your idea sounds delicious! You must share the recipe later as it sounds like something lots of people would enjoy eating. Especially the little ones who can be hard to engage sometimes with new recipes.

Deli Chicken Tenders Tex-Mex Salad
One Bowl Meal

I make this recipe for one but it can be made for any number by adjusting the amounts.

1 or 2 Deli Chicken Tenders -sliced into bite size pieces (with or without skin – I leave the skin on)

1 small chopped Avocado
1 Tbsp chopped Red Onion
1 small chopped tomato
1 tsp pickled sliced or diced Jalapeno Peppers
S & P to taste
½ cup shredded Mexican mixed cheeses or shredded Pepper Jack
Juice of ½ lemon or lime
Olive Oil - Apple Cider Vinegar to taste
Salsa - optional
Mix all ingredients together and serve with chips or crackers

This is the basic recipe but I have changed it up by adding Ranch Style Beans; pasta; potato logs from the Deli; corn; or Uncle Ben’s 90 min Mexican Rice.

Well dinner is getting postponed. I can't stand the smell of food today, so am hiding in my bedroom. I'll try again tomorrow.

Sara that sounds good.
Up north they can use chili beans or black beans rinsed and drained. I could not find Ranch Style beans to make seven layer dip when I was in Wisconsin. Chili beans to the rescue.

Sara, that salad sounds delicious and Marilyn, I like the idea of black beans addition as well! Yum! What a nice recipe to have for the upcoming summer months when you don't want to cook but need a healthy choice.

Buffalo Chicken and Loaded Baked Potato Bakeover (enough to feed 12!!!)

1 whole chicken, cooked, deboned, and meat cut up
3 lb bag potatoes, diced and cooked
3 carrots, peeled and diced
1 onion, peeled and diced
6 stalks celery, peeled and diced
1/3 C olive oil
1/2 T salt
1 T pepper
1 T paprika
2 T garlic powder
1/2-3/4 C hot sauce (we use Frank's)
2 batches of the GF biscuit mixture using the MJF baking mix, or other biscuit mix, prepared
2 C cheese (we used jalapeño jack goat cheese)
1 C crumbled cooked bacon
1 C chopped green onions

Preheat oven to 375.
In a large bowl, mix half the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add the potatoes and chicken. Set aside.
In the two takeover pans, divide the onions, carrots and celery evenly between the two, in the remainder of the olive oil. Sauté for 5-7 minutes, or until tender. Add in the potato and chicken mixture, dividing between the two. Heat until warmed. Turn burners off.
Mix in cheese, bacon crumbles, and green onions. Top each with half the biscuit mixture. Put in oven and bake for 15 minutes or until biscuit topping is cooked.

That sounds so yummy Shannon. I may have to try that. I will shred the chicken, though. For some reason, Ed doesn't like much chicken if he can tell what it is. LOL! He loves casseroles, though, and I think this would pass muster for him.
