The potato recipe that I sent Sherry appeared in the Fort Worth Star Telegram several years ago. I did not know it had an Irish name until recently. Also, I always add a bit...to any recipe. Here in Texas we enjoy pepper and I often add just a bit more than a recipe calls for.

COLCANNON...My way
Finely shredded cabbage (1/2 of a medium head or a bag)
1/2 of an onion/ finely chopped.
Add these to a large skillet with 2 T hot vegetable oil. Toss, cover with lid and lower your heat to low. Cook about three minutes. Remove lid, add salt and pepper, toss. Replace lid and cook two more minutes. Transfer to a bowl and cover.
1/2 #bacon, diced ( I use scissors and snip snip) QUICK!
Fry the bacon, stirring it frequently. When it is ready remove and put it on top of the cabbage.
Add 2T butter to the bacon fat.
Add thinly sliced potatoes you have peeled and rinsed. You need three large or seven or eight smaller potatoes.
These are similar to cottage fries.
Toss the potatoes to coat with the bacon and butter. Cover with lid. Wait two or three minutes Remove lid toss, replace the lid, lower heat to low. Now check every two or three minutes, adding a tiny bit of salt and some pepper. After 10-12 minutes they should be ready.
Assemble. Butter or spray a square casserole dish or baking pan. Layer potatoes, GRATED CHEDDAR cheese, cabbage...potatoes, cheese, cabbage and the remaining potatoes.
Lay parchment paper on top and bake for twenty minutes, at 400°. Remove parchment and brown for five more minutes.
Taste the cabbage and the potatoes to see if you need more salt or pepper. I try to use just a bit of Kosher salt in each as they cook. The bacon is salty and so is the cheese. Cheese, probably about 6 oz. GRATED.
I am a "Dump and Pour Cook", and at 72, I guess it is automatic. The food is always good, so my family is happy.

Thank you Sherry for the recipe card package. Yes I will try your recipe that uses new potatoes (my favorites) and herbs. Thank you for the herbs to make bread dipping sauce, yum. Also the little placque and tiny measuring spoons. Now I know how much a pinch, smidge and a dash are. I love it all. Thank you so much.

Thank you Amy! Green is my favorite color ! I can't wait to try the recipe!! I got hungry just reading it!!I went to Ireland for 10 days in 2011. The things we learned from our guide were amazing and funny at times! Exactly as you said, How St. Patrick got to Ireland. The trip of a lifetime for me!

Julie, your package went out on Tuesday. I hope you enjoy it!

And I got the package from you yesterday! Oh, my! I love everything! And, BTW, the chocolate WAS delicious! I will make the recipe soon - I love potatoes, too. And I love the crocheted glass cozy - especially the color, the Easter and St. Pats stickers, and the dill dip, and the peppermints. And - coming from Illinois - I also call the evening meal supper and the Sunday noon meal is dinner. And we have lunch after noon. LOL! Thank you for everything - I will post a pic soon.

Dear Connie, yes, I got it! Thank you so much for the yummy recipe and all the lovely note cards! And also the sweet Easter card. I had written you a little note when I didn't receive the swap, to see if you were ok, or if something happened. Guess what, it's still sitting on my desk!
