I have Martha Stewart's Boston baked beans in the oven. I'm using cranberry beans and smoked ham hock.

For supper with my sister I'm making salmon patties, green beans, and Tasha Tudor's potato patties. I'm made potato patties many times but this will be the first time to use grated raw potatoes instead of leftover mashed potatoes.

You will love the grated raw potato cakes. My aunt taught me to make them when I was 13.

Yesterday I roasted my first leg of lamb using MJF Indian Blend. Turned out very tasty. I will try freezing some of it - too much for one person to eat at a time. And I really don't like leftovers as I once did. If it freezes well I will cook it again.

Sara, I'll be right over with wine and mint jelly! I love lamb! Have you tried it with mint jelly? It's a nice combo!

In my oven is a brunch casserole... hashed browns, eggs, ham, mushrooms, peppers, onions and garlic.

In the slow cooker is a venison roast with stuff to make a teriyaki sauce for it.

Shannon your house must smell like home with all that cooking going on.

Just got back from my sister. She's in for the day because her car is in the shop. I made ground beef nachos with Velveeta cheese and tomatoes w/chilies. Re-fried black beans and Spanish rice on the side. Loaded it all in a basket and took it over.

Pork roast in the oven - will add sweet potatoes, onion, carrots, dates, and small can of sauerkraut later.

Ladies, I thought I would share this recipe.
I just put my third batch this year in the oven. I gave it as gifts to my co-workers at preschool. I have two half gallon jars full, and am trying f or two more, so my family can have their fill.
It is very easy and yum yum good.

Dried Cranberry Trail Mix

Preheat oven to 225°.

1 bag smaller shaped pretzels
2 small bags dried cranberries (Craisins)
2-3 egg whites beaten to frothy
2 cups pecans or walnuts
1 cup sugar
1 teaspoon cinnamon

Put the pretzels, cranberries and nuts in a large bowl. Pour the frothy egg whites over and toss to coat. Mix the cinnamon and sugar and sprinkle over the mix as you toss it.
Spray two large pans with cooking spray. Divide the mixture between the two pans, and place in the oven. Cook for at least 30 minutes but not more than an hour. The sugar and pretzels need to be dry, and crunchy.
Cool and bag or put in jars. Enjoy.

Once in awhile I like to try cooking something new. Today I bought a bok choy. Been looking through my recipe books and on-line. In the next several days I will combine a couple of the recipes and use both the leaves and bulb in a clear broth soup. Will thin slice radishes, garlic, shallots, and par-boiled thin sliced potatoes and carrots. Will let you know how it turns out. By cooking time I should decide on what herbs to use.

Oh how I LOVE bok choy!!!! Yummy! I've never tried it as a soup! Let me know how that goes!!!

I think I am going to use some of the leftover ham from New Years and make a cheesy potato casserole with it... something quick, easy, and WARM

Sara - I either roast it with a little olive oil, salt and pepper, or stir fry it. It is also really good raw, sliced thinly with other greens, in a salad. I really hope to grow some this year!!!

So I changed my dinner plans... instead I am going to make a chowder of sorts. Sauteeing some carrots, onions, celery and bell peppers. Going to add some garlic, thyme, salt and pepper. Then some flour. Add some broth, milk, and potatoes. cook until potatoes are tender, then add ham and corn... possibly peas as well. We will see how it turns out :)

We had a meatloaf, baked sweet and white potatoes, sautéed Brussel sprouts and squash. For dessert oatmeal, cherry, chocolate chip cookies. I make the cookies with about 1/2 the sugar, the left over cherries in the jar from the juice I canned and dark chocolate chips. They aren't as sweet, but still taste good.

We have tart cherry trees and to can the juice I put about 1 1/2 to 2 cups of pitted cherries in each jar and then cover them with boiling water leaving a 1/2" head space. They process in a boiling water bath for 30 min. After we use the juice, we don't want to just throw out the cherries so I put them into cookies or cobbler etc.

It was cold last night so I made stew. It was nice at 1:00pm for lunch today too. Tonight we had soft tacos. Last night I needed to make something for snack time today. When I opened the freezer the bag of blueberries were right there, so I made muffins. For insurance I took Oreos along, but most kids ate the muffins.

I must admit, not much is cooking at the moment.

I've waiting for Oprah's new cookbook to arrive at my door steps. I've been on a health kick for the past 7 months and I'm loving it. I feel so much better too! Looking for some inspiration ....!
