That must be really hard Sara to love all that sea food and not be able to eat it.

I have a dutch oven but haven't used it. someday!

I'm so sorry about your seafood allergy!

I absolutely LOVE my dutch ovens, as well as my cast iron skillets! The one dutch oven I have is enamel covered... while I love the color, I'm not sure the enamel is necessary or even practical... but it looks pretty ;) Amazon is a great place to find things at discounted prices if you watch them! I often put things I'm wanting in the saved for later part of the cart, so that when the price drops and I sign in, it lets me know!

On a different note, tonight's dinner plans are Chipotle Lime Grilled Chicken, Cilantro Lime Cauliflower Rice, and Pico de Gallo with Chips :)

Thanks Ruth! I have an open door policy!!! Seriously - any of you are welcome any time!!! As for my kids eating, oh my goodness yes!!!! I've been very blessed that none of them are picky... though they probably can't be since I don't cook the same thing very often!!! I LOVE to try new recipes... but I'm constantly tweaking them!!! The kids eat a TON of food!!! We seriously go through A LOT of food! Tacos is one thing we repeat... generally once a month... but I make six pounds of meat! And they eat it! My ten year old can eat 8-10 tacos! And they are full of veggies, like onions, peppers, tomatoes, and lettuce! My five year old (almost six) eats five tacos! I always hear how teenaged boys can eat a ton of food... I have a hard time imagining it, as they already do! The only veggies we do not eat is squash (partially because I am allergic and partially because they only like the texture when it is raw in salads) and fennel. I can't think of any others they don't like! Same with fruits!!! Mangoes and kiwis are the only fruits I limit because I have a couple that react after too much. With being gluten free, we don't do much processed... and we eat a lot of produce!!!

Today I made a recipe out of my Country Irish Cookbook I've wanted to make since I got the cookbook. Corned beef curry made with a can of corned beef, onion, carrots, potatoes, can of diced tomatoes, ginger, can pineapple chunks, hot peppers, sour cream, and herbs/spices. It has a ton of flavor and yes, I will make it again.

Bought two pkgs of marked down cut up cantaloupe today so will make another batch of jam tomorrow. I really like cantaloupe jam.

Sara, I love that you like to experiment in the kitchen and try new dishes! It's so wonderful to read about it too!

Not much going on in my kitchen. I did make a batch of pasta for dinner on Tuesday with a butter tomato sauce. It's my favourite. It heats up great too!

Yesterday I put up my annual Bread and Butter pickles using my Mom's recipe. Our daughter's family garden exploded with cakes last week so it was time to get busy! I make these every year and they have become a favorite of my girls as well as my one brother and sister. Mom's tradition continues to live on!!

Winnie your pickles are beautiful - worthy of a country fair blue ribbon.

Made Mexican chicken soup this morning - so good I had it for breakfast.

A cooking tip from my Irish Country Cookbook. Lay parchment paper on top of veggies when sweating them. I did it when cooking onions & garlic for the soup. Keeps the moisture in and the onions cooked without browning.

Winnie your pickles look amazing! Is it a hard recipe, secret ingredients.
Sara, The Mexican soup sounds delicious Sara and the tip for the veggies is interesting, I will definitely try it.

Not much cooking in my kitchen these days. I am itching to bake some bread but my time is so limited these days that I'm just not home long enough to make it happen. With fall harvest soon to be in full swing, I'm hoping to be able to spend a bit of time in my kitchen.

Canning pork roast this morning and had little over a cup left over so I came up with this recipe which is now in the oven. Pork roast; smoked link sausage; cabbage; mushrooms; my pickled peppers. Everything needed to be cooked or used up so it all went into my ceramic oven pot. Hope it turns out okay.

Sara - sounds yummy!!!

My parents are coming over again today, so I'm introducing them to a new cuisine and one of my favorite dinners... Malaysian chicken curry! My parents usually eat very simple... a meat, starch and vegetable,thought only vegetables they usually eat is green beans, peas,or corn - which is actually a grain and nota vegetable, so I'm looking forward introducing this to them.

Shannon I hope they like the curry. Curries are one of my favorite dishes.

My dish turned out good - on the sweet and sour side. Had enough for my lunch and two more servings. Will share with sister.
