Today I finished up the "y" sound, as in "yak" with my 5 yo... so for dinner we are having Yassa over rise. It is a Senegalese Lemon Chicken recipe. I'll probably go "easy" for the veggie and heat up some frozen broccoli.

Next is Z... so we will have Zigeunerschnitzel next week... thinking I will do it Thursday since Friday is St. Patricks Day. We also start Thailand next week, so most nights we will have Thai food, as it is a family favorite cuisine!!!

I will be cooking a pot of pinto (red) beans. They are very pretty, having soaked overnight. Of course there will be fried chicken for the guys. Baylee and I love sedans noodles...So if time permits, I might make some.

Pinto beans and fried chicken means it's Sunday dinner in Texas. I like to add can tomatoes to my pinto beans when they get soft. Do you add tomatoes? I know some people think you shouldn't add tomatoes to beans - I think they are the same people who don't want beans in their chili. Maybe not - I would rather not have beans in my chili, however, I have eaten mighty good chili with beans.

Long ago, when I had a hungry ten year old, my mother told me to add 1 # of ground beef, a big chopped onion, and canned tomatoes to my beans. I added Rotel. I can not get by with this when my husband is eating. He is one of those no beans in chili folks. But the rest of us love our beans with the extras.

I haven't had ground beef in my pinto beans in years. Don't know why because I really like it. I ought to cook up a big pot and freeze single servings. Thanks Marilyn for reminding me. Will add ground Angus beef to my shopping list.

Sara, when my son was ten, he and I ate those beans...Sunday night, Monday night, Tuesday night, Wednesday night and Thursday night. We had a Salad and cornbread with our beans. I made little cornbread pancakes for us. My son still loves beans and salads...he does not care for cornbread though. On Friday afternoon we went to my mother's house for the weekend. We had a good variety of food there. I was teaching but did not have a lot of grocery money. What I had mainly went for our breakfasts and lunches. I guess the variety at those times helped us not get bored with our suppers.

Marilyn, from the time my son was four I was a single mother. I remember the early years before I got a better paying job and how the only meat we had was ground beef and occasionally chicken. His breakfast and lunch was included in daycare so I only had to do my lunch, our suppers and weekends. My breakfast was a peanut butter sandwich and a glass of iced tea. It would be twenty years later before I started drinking coffee.

By the time he went to school I was making enough to feed us better. His kindergarten year all he wanted for his lunch sandwich was Oscar Meyer bologna and believe me he could tell the difference. One time I tried to sneak the store brand passed him but when I picked him up he let me know his sandwich was okay but it wasn't OW.

I'm allergic to beans, so no beans for me :( I need to create a new recipe for chili, for that reason!

Tonight is our last Vietnamese meal... Bo Luc Lac (or Shaking Beef) over rice

Shannon so sorry to hear you deal with food allergies. I'm allergic to seafood and do not eat it. I have an intolerance to iodine so I only eat salmon a couple times a month. Gotta have my salmon patties.

Shaking rice over rice sounds interesting.

Food allergies can be the pits, lol. I'm allergic to such weird things... one of the bean families (which includes the most common beans, including green beans, kidney beans, black beans, etc), the squash family, and cow milk (ALL parts!!! lactose, casein, whey, all of it!)

Shannon, venison makes very good chili. I would share my recipe with you too, but I don't have one. I just throw it all in a big pot without measuring.

Ok, Shannon, here is a chili recipe. It is made with beef, but works well with deer too. You may need to add some fat for flavor. When the chili is finished, just skim away some of the fat or chill and it will become solid...then you can remove as much as you want.
Chili

5# meat coarse ground Chuck, called chili meat here, or deer meat or a combination
3 oz. Chili powder. (1/3 cup)
1 large onion, chopped
1 clove garlic minced or 1 t garlic powder
1 t salt
1 t pepper
1/4 t cayenne pepper
1 can tomato sauce (8 oz.)
Begin with a large pot, add 4 cups hot water. Add the chili powder, garlic, onion,salt, pepper, and tomato sauce. Stir well. Add the meat, break it up if necessary. Bring to a boil, stir, cover and reduce heat to a simmer. Cook for three hours. Be sure to check it periodically, stirring, to check the liquid. During the last hour check several times. If needed you may add a bit more water. If you think it is too liquidy you may thicken it a bit by stirring a couple of T of Masa in 1/4c water, then add to the chili.

Now you can adjust your seasonings. More salt, etc. Enjoy.
If your family loves chili like mine...I make double and freeze it in two cup portions.

We had baked apple slices with brown sugar and cinnamon. It was a delicious way to warm up after a 10 degree morning and lots of snow.

I made a Tunnel of Fudge cake today. It was good but no one at the table remembered it but me. That means I have not made one in, probably 47 years.
Next week I will try the Sock it to Me cake. The recipe is from that same era.
