Shannon, I received your salad recipes today! Thank you! The Black Bean, Corn Red Peppers, and Avocado Salad sounds especially refreshing! My daughter was here to day and thought that salad sounded a little like her Texas Caviar. Yum!

Thank you also, Shannon, for the "tuck"! I can't wait to do something with that! Shhhh! I don't want to spoil it for the others

I can't decide whether to do a book or a box... I guess it will depend on what I find first!

I'm not sure yet either, what to do with them. I actually bought a little clear plastic recipe box Saturday. So far, I have been adding them to the Wildflower recipe binder I started for the original recipe swap. I can fit four to a plastic sleeve. That way I can see front and back. Each Wildflower's 4 recipes are in the same sleeve. I can still use the original dividers I set up: who knows, I may end up using the box.

I was going to do a binder but my brother in law gave me a pretty little box with 3x5 cards in it. He knows I like to do the recipe swaps, so I think I will use it and make some dividers for whatever subjects are picked. Soups, salads, etc.

I received your recipes today, Erin! Its funny...I rarely (no pun intended) eat beef. But some recipes still catch my eye and palate. The Beef Noodle Bowl sounds really good. I love noodles and stir fry. Thank you for reminding me to look through the beef recipes I always loved. B4 changing to veggy.

You girls are cracking me up! I'm the opposite. I get grumpy if I haven't had any beef in a while! Love it. :)

Maybe I'm just generally iron deficient. Well, I know I am now. I have to take hema-plex, but I don't know about when I'm not pregnant. That might explain it!

That would make an excellent explanation then!! I know I'm the same way, actually, when I'm pregnant.

I can understand the "grumpy" thing, Girls! When we first started going sorta veggy...I resented no getting my meat! I really did get grumpy! Especially, when I would go to my mom's or sisters and smell a roast or some other dish cooking.

Years ago, we had a family gathering at our home. A friend had brought a huge pot of chili. Our son, (about 20 at the time) said, "Wow, this is great chili! What is that flavor?!" I said, "It's called meat, John". ...and, it was! We still laugh about that. By the way, I do use ground turkey now.

Oh Judith! That is hilarious! How long have you eaten sorta veggie? We have no meat Fridays during Lent and I have a hard time trying to come up with ideas that aren't necessarily fish. My husband likes fish and seafood but I'm not a huge fan...Did it take awhile to get over feeling like something was "missing " ? I just don't know if I could be very successful....if I don't have red meat about 2-3 times a week I don't feel "human", as I like to say.

Maybe we could have a month of sharing vegetarian recipes? I'd really like to have a few more ideas and incorporate more into our eating.

Debbie, we have been sorta veggy for about 30 yrs. now. I say "sorta" because I get lazy and fall off the wagon once in a while. Well, DH doesn't eat pasta or dark green veggies (due to kidney stones buuilt by the added calcium). There was a time when he grilled often. Nothing like thick Iowa pork chops on the grill. We quit grilling when he quit eating pork and red meat....and beans just keep falling through the grill. Sometimes we have ground turkey or bits of chicken. He absolutely refuses ham (We have large confinement hog facilities close by and the smell sticks with you. I think you can even smell it in the meat at the store) Sometimes I really cheat when we are on vacation and order ribs. (wicked I know). However, more often than not I crave vegetables. Love them roasted. And, I actually get tired of the little meat we do have. We do not begrudge of judge anyone else for their tastes though. I love to see the smaller farms raising their own; and, we buy meat for our kids and gkids, as they don't have much $$$ and don't eat like us. I can still hear my daughter as a teen pleading, "No more lentil loaf!". Bless her heart. An important thing I have learned (kicking and screaming all the way) is to stop trying to make vegetables and beans/grains taste like meat. Enjoy them for what they are. I have many veggie recipes to share if we do a month for that. Besides, they can always be used as a side dish.

I tried to go veggie once. I think I lasted a month, but I was in high school and didn't have very much resolve to stick with it.

Debbie, I'm the same way with lent. We eat fish on Fridays but I hate it. I'm not a fish girl. My husband loves it so I make it mainly for him. The kids always get pizza on Fridays, usually homemade. Sometimes I just eat with them. :) Sometimes I have the palate of an 8 year old. PBJ, chips, pizza, etc.
