Hi ladies,
Every once in awhile I need a new idea for supper, so I am hoping with this thread you will tell us what you are creating for supper. For me many of my meals have to be quick, easy and easy clean up. I do like to double a lot of recipes either for leftovers or to put in the freezer for another meal. Please share what you are having or had for supper. I just finished throwing together a Taco Salad. I needed to use up lettuce, tomatoes, cheese that were in the fridge and half a bag of chips so this was quick and easy. We also have watermelon I cut up last night. The only problem with this supper is that Keith will be looking for something else in a few hours using the excuse we had "salad" for supper, never mind it had a pound of hamburger in it. Men! Hope I get some new ideas ladies or I can give you some new ones.

What a great thread! It's always good to have different dinner/meal ideas. For me, I am very fortunate that my husband cooks. I come home from work and dinner is on the table. Okay, it does help that he's home by 3:30 p.m. and I by 5ish p.m. I love to cook but I refuse to fight him for it. lol I do bake and make fresh pasta!

Tonight we had my favourite - Salmon stuffed with spinach. Love, love, love that! Although I do not think anyone else does because Pumpkin and DH had chicken! lol

For you salmon lovers out there, here is the recipe:

One bottle of wine
Spinach (organic of course) - I'm starting to sound like Mary Jane Butters! lol
Sun dried tomatoes (we make our own)
Pesto
Pine nuts - optional but a must for me

Open bottle of wine and pour yourself a glass. Chop the next 2 ingredients and mix with pesto and add pine nuts.

Slice salmon partially in half (horizontally) and stuff it!

Bake at 400F for 8 to 10 minutes (spinach looks done)

Pour yourself another glass of wine and enjoy your dinner!

Carole, I love any recipe that starts with wine and I don't even care for salmon, but might have to try this.

We had meatloaf last might. I live with meat and potato guys so I usually make two and freeze one. I also like to do lasagna the same way. I have started more cleaning eating so the burger I used and the potatoes were organic. Also made asparagus and corn for those non asparagus eaters.

Morning Ladies, I just put a roast in the crock pot with potatoes and carrots. Beef Bouillon, Aujus Gravy Mix and Onion Soup Mix. Done. Quick and easy. I'm trying to get ready for a overstock sale day at the Vintage Soul. Big day on Saturday and have lots to do to get ready. I should not wait till the last minute to try and get it all done but oh well. But supper will be ready when the hubby comes home from work. Have a great day everyone.

Sherry you are on the ball today. I was hoping to have leftover Taco Salad, but the refrigerator gremlin must have visited after I went to bed. He left me just enough for lunch, but I would much rather have a meatloaf sandwich with Denise's meatloaf, sounds yummy Denise. Now I will go stand in front of the freezer and hope something shouts pick me, pick me. Back later to let you know what I find.

Hey Denise, would you be willing to share your meatloaf recipe? I have one but it is made with tofu and various grains. Not sure your Meat & potato guy would go for that! lol

Carole there is just something wrong with a tofu meatloaf :). But being a cattle producer I'm all about beef and rarely have a shortage unless it is almost time to butcher. Now the news you have all been waiting for, the winner of the pick me freezer contest held at my house this afternoon was..... Grilled Cheesey brats made by our local butcher. Along with that I am making German potato salad and corn on the cob. I love summer cooking.

We had meatloaf last night as well :) DD (11 yo) made it, along with steamed broccoli and garlic and herb potatoes. Tonight is salmon with immmmm not sure yet, lol

Yummy Julie, Are you BBQing? What time do you want us over for dinner? I'll bring the beverage!

We have a German Charcuterie (no idea what the English word is for that but he makes authentic German sausages and is sort of like a butcher) just across the border in Lacolle. His brats are to die for! Such a wide variety too! Oh and the sauerkraut ...... gosh, road trip!

Shannon, send that 11 year old over to my house. lol I love salmon. Had it last night! Yummy!

We were going to have quesadilla tonight but since Julie is having Cheesy brats, I'm coming over!

I will set a place for you Carole, I prefer white over red just so you know.

Shannon, you lucky duck, an 11 year old who cooks! At that age my boys only knew how to do grilled cheese or inhale large quantities of food. My daughter never had an interest in cooking until she was ready to leave home and realized she was going to starve if she didn't get some tips and lessons from mom. Now she is a fabulous cook.

How about eggs benedict. My husband loves it. We like it with bacon or Canadian bacon. Our neighbors next door have chickens so I'm right at home. What to eat is the oldest human question. lol Sometimes it's waffles or sometimes it's hot dish or sometimes it is steak. What's in the fridge and what I feel like fixing is the key. Good luck to you on finding some good recipes.

All these menus sure sound yummy! I'd like to show up at everyone's house!

My dinners are usually all made from fresh ingredients and it varies as to what the final product is! Now that the girls are grown up, we are like you , Bonnie, dinner can depend on what I have and what we fell like eating! I do struggle with high cholesterol so we try to always keep it heart healthy for my sake.

ALL of my kids (okay not my almost 2 yo yet) fight to get in the kitchen and cook! Yup, that includes my 4 yo son, my 6 yo daughter, my 8 yo and 9 yo boys, and my 11 yo daughter. My two older girls make breakfast every morning now, and we rotate who makes or helps to make dinner. I absolutely LOVE to cook and bake, and my hubby enjoys it as well (he actually made the dinner tonight), so we are hoping to one day have a bigger kitchen, lol.

Tonight ended up being salmon glazed with a mustard and honey (among other ingredients including brown sugar, ginger, and balsamic vinegar), with rice and green beans. It was quite yummy!

Now to figure out what I want tomorrow night....

Bonnie, I love eggs Benedict! That's what I order in restaurants. Yummy!

It makes me laugh when you all mention Canadian Bacon because I know what bacon looks like in Canada and it looks just like yours! lol The stuff you call Canadian bacon, we ham! lol

Gabriel is like that, too, Shannon, but getting Isabelle to cook is a pain! I think she plans to marry a man who can cook. That, or live next door all her life! :D

I needed to use some eggs, since we are running over again, so I made a breakfast- type casserole with diced potatoes, eggs, and local sausage. Freshly baked blueberry muffins on the side.

Alicia, sounds yummy! Any blueberry muffins left?

Tonight we had marinated steak with roasted potatoes and broccoli! DH makes this great marinade that is just delish! Slap it on the BBQ, yummy!

For dessert, Gosh .... Price Chopper's makes this amazing Peanut butter pie! I love peanut butter ..... what is not to like, Oreo pie crust, peanut butter filling topped with whip cream, drizzled with peanut butter and peanut butter cups on top! Did I mention that I like peanut butter! lol But, you can only eat a sliver. I tried to eat a large piece but couldn't' finish it!

So, what's on your dinner plate?

BTW, DH and Pumpkin are leaving for MA on Friday coming back Sunday evening. Would love to know what you're having, cuz .... I may just stop by for dinner! lol

Alicia, our lettuce (garden for that matter) is not as advanced as we would like. It's been such a cold spring. Mother nature knows what she's doing, so I'll be patient!

We are on the opposite end of that, Carole! Our lettuce has bolted and pretty much died. We are hoping to start getting tomatoes in the near near future. Our garlic has been pulled, as have our peas. Still waiting to start getting green beans.

Tonight we are having spaghetti with the last of of our lettuce for a salad. We have an outing to Charlestowne Landing - a combination of history and local wildlife. Tonight the wildlife area is open to a group of military families, after hours. So we will go there first, then come home for a late dinner.

I love fresh fava beans, so I grabbed some at the farm this week. There were some gorgeous yellow squash in my csa share, so well be having the favas and yellow squash with onions and garlic on pasta tonight. Yum!
