Well I did it. I just submitted for a badge. Since I have planted the beginnings of a herb garden this year, and thanks to Sara posting the badge requirements, I decided to forge ahead and give it a try.
I put in my submission that I have been growing rosemary, sage, thyme and oregano; and how I use them in my cooking. oops, I think I forgot to include the fifth which is parsley.

Guess I will put in for the next badge, since I have added more herbs to the garden.

So far I have not used herbs medicinally, just for cooking.

Update: I corrected and re-submitted my form for "beginner"; today I submitted for intermediate. Here's what I wrote:

I have started my herb garden as mentioned in my submission for beginner merit badge.
In addition to the five herbs previously mentioned, I also have planted: Italian flat parsley and chives.

I use the chives fresh from the garden, chopped and added to soft cheese (cottage, feta) and also add it to my biscuits and sprinkled atop a summer salad.


I certainly hope I am doing this correctly.

Kathleen I'm right behind you. After I submit for a badge I always wonder if I did it right or enough. So far it has always been accepted. After each time I promise myself I won't fret about it again but I always do.

I submitted for the Beginner & Intermediate Levels. This is what I wrote.

Beginner:
I identified five herbs and their uses.
Cinnamon Basil – used in teas and sugars
Chives – used both in cooking, vinegars, and as a garnish
Thyme – used in cooking, vinegars, lacto fermenting, and medicinal teas
Peppermint – used in teas, sugars, and candied mint leaves
Dill – used in pickling, lacto fermenting, cooking

I used fresh dill in salmon loaf.

Though I have grown herbs for years it was good for me to think on the individual herbs and how I use them.

The salmon loaf turned out really good. I prefer fresh dill to dry dill.

Intermediate:
I grow herbs mostly in containers but do have three in the ground. I make medicinal teas for the onset of colds. Two of the main herbs I use are Greek oregano and thyme.

After I dry and mix the herbs together I either store the loose tea in glass jars or put into tea bags that I seal with a hot iron. The tea bags are handy to use and make nice gifts. The teas may be affective at first signs of a cold and also help to ease the symptoms.

Love baking fish filet wrapped in foil, with lots of fresh dill. Sometimes I add a couple of lemon slices.
Set the fresh fish filet on a large piece of heavy duty foil, cover it with lots of fresh dill, then fold and seal the foil tightly.
Bake in a 450F preheated oven about 15 minutes, more or less depends on thickness of the fish.
Be careful unwrapping, as there will be lots of hot liquid.

Sara, how do you do your salmon loaf? I wish I could keep my rosemary in the garden year-round, but it gets much too cold here. Every other time I have ever attempted to keep it indoors it has died.... since I have four plants this year, and a big, new bay window in the kitchen with lots of sunlight, I am hoping for better results this time around.

The herbs I use most often are thyme, sage, rosemary and oregano.

Kathleen your fish dish sounds delish.

I cook for one but how I do it can easily adapt to any number.

1 small can of red salmon (red salmon is what I prefer)
1 beaten egg
Cracker crumbs
Fresh minced dill
Cayenne pepper or Tabasco Sauce to taste
Ketchup
Worcestershire Sauce

Preheat oven to 350 degrees.

Drain salmon & crush the bones. Add beaten egg, dill, cayenne pepper or Tabasco Sauce, & enough cracker crumbs to form loaf.

Top with ketchup & Worcestershire Sauce mixture to taste. Put in 350 degree oven and check after 30 minutes for doneness.

I mix the loaf in the oven dish so I only have one dish to wash.

The next day it makes a tasty sandwich.

I submitted for expert badge this morning. This is what I wrote.

This year I added three new herbs to my herb garden. Lemon grass I have used in teas and sauces. Mojito mint (Cuban mint) I use in teas and making flavored sugars. Chocolate mint I use in flavored sugars and coco in the winter.

I made 9 herb tea bags with herbs I grew & dried. The bags are used in cooking dried beans, lentils, and soups. The dried herbs I used are rosemary, sage, thyme, and chives. I will send the herb tea bags and recipe to members of Wildflower Farmgirls Chapter and MaryJane.

The herb tea bags turned out good and will be easy to mail. I keep herb tea bags on hand to use when I either don’t have the fresh herbs, or I am cooking something that I want the flavor but not the herbs in the finished dish.


I hope to mail the herb tea bags on Monday.

Kathleen, thanks for the info on the blog about healing herbs. I will visit it. So much info out there about herbs ~~~ it's so good to come here and learn about it.

Edited to say: I did visit the blog and was impressed when I saw the shelve of herbs. It has been added to my favorites. When I have time I will read it word for word.

It does not look like hubby has a picture on his computer... and I am still waiting to get mine returned to me. I'll try to get another picture of it today in between packing. I haven't taken it down yet, as we use the herbs pretty frequently. I have a TON of different herbs and love to use them for various reasons! One day I will have an herb garden as large as a veggie garden, full of items that we use most frequently. Until then, I keep a stock of our beloved dried herbs :)

Other than the badges we're working on together, I think my personal projects have taken over for now. Sometimes it's hard for me to focus on one thing at a time. I should take a picture of my craft table for you guys... yikes! :)

Erin, what are the herbs in the photo? I just bought another herb book. This one is a beginner's guide to medicinal herbs and how to grow and use them. It is excellent! Lots of great information, recipes, and really good photos of the plants. I recognized several of the plants that I always thought of as pesky weeds, now I know to stop trying to get rid of them.
I have seen the book for up to $17.+, but I bought it as a kindle book for under $8.
By the way, I do not own a kindle. I own a NOOK, but kindle books can be read on pc and android tablets (my Nook) or directly from the Amazon site on Amazon's Cloud Reader (free). Free sample are available at Amazon.com

Mint is the one in the front, then lemon thyme, and sage. I also made a tincture with mint and vodka. Sadly I have not given my herb garden the attention it needs. I'll see what I can do about that tomorrow.
