Ok, I just sent my breakfast recipe. Let me know if you don't get it, and I'll send it individually. I have all of the recipes printed that I've received so far. If you posted here that you sent one, I have it. So excited to get this book filled! :)

Hi everyone! I'm not able to get a recipe out - I'm studying for a big exam - I tried to get it today but I just didn't have time. I will try tomorrow - my exam in Wednesday, so if I don't get to it tomorrow, I will make sure to do it on Thursday. Sorry it's late!

I have a question for you ladies on how we should proceed to week two.

We have 6 breakfast recipes. Would you like to continue the "breakfast" topic for the remainder of the month; and then move on to the next topic with recipes each week for the month of July, etc?

You tell me which you would prefer,..... please :)

I am partial to the 2nd option. That way, we would have a good number of recipes in our binders. Of course, being a true Libra, I will go either way!

Yes to both questions Shannon.
We are voting to do 1 topic each week for the month.
So we would do Breafast each Monday for the month of June.
Then in July we move on to the next topic such as Lunch.

It is up to everyone . So far everyone says Yes.

Frozen Waffle Pies

These miniature pies are filled with your favorite flavor of frozen yogurt and then topped with strawberries, blueberries or peaches.
Prep Time: 20 minutes
Total Time: 2 hours 20 minutes
Servings: 3
Ingredients
• 1 slice frozen Dole® Sliced Peaches
• 2 to 3 slices frozen Dole® Ready-Cut Fruit™ Sliced Strawberries
• 2 tablespoons frozen Dole® Blueberries
• 3 Kellogg's® Eggo® Homestyle waffles
• 1/2 cup desired flavor low-fat frozen yogurt
• 1/4 cup low-fat vanilla yogurt or low-fat plain yogurt
Directions
1. Let fruit stand at room temperature for 5 to 10 minutes or until easy to cut. Finely chop peach and strawberry slices. Lightly coat three 6-ounce custard cups with nonstick cooking spray. Set aside.

2. On microwave-safe plate microwave waffles, 1 at a time, at high for 15 to 20 seconds or until thawed. Press one waffle into each custard cup. Scoop some of the frozen yogurt into each waffle cup.

3. Arrange peaches, strawberries and blueberries on top of frozen yogurt. Pipe vanilla yogurt onto each. Freeze at least 2 hours or until firm.

4. Remove from custard cups. (If pies are difficult to remove from custard cups, dip bottoms into warm water for 2 minutes.) Serve immediately.


.....can use Yogurt or whipped cream cheese instead of frozen yogurt or even custard/pudding !!!
