I've tried two batches to make and neither are working. The second I finally got to turn tan after about 45 minutes,but it was separating at that point and only got worse the longer I left it on. After 1 hour and 15 minutes it was getting very dark an all the butter was separated. What am I missing?

Dear Laurie,

I have a recipe for Microwave English Toffee I was going to try this year. It is from my husband's aunt who is a fabulous cook. I had it years ago at her house. Unfortunately, I've never made it. Here's the recipe:

1 cube melted butter
1 c. sugar
3 T. water


1. Microwave on high for 6 - 8 minutes in a deep glass bowl.
2. Spread in a metal cookie sheet. Since the recipe states "in" I'm assuming a cookie sheet with a low sides.
3. Sprinkle with nuts (I think this means almonds.) and chocolate chips.
4. Cover with a lid (just long enough to melt chocolate chips) and then spread chocolate chips.
5. Put in freezer for 15 - 30 minutes.
6. Break into pieces and serve.

I hope this helps! Please let me know how it turns out if you decide to try it. I'll do likewise if I get around to making it before you do.

Laurie, I wonder if it has something to do with the altitude where you live. I know where I live the boiling point is different so candy recipes don't always work. You might want to do an internet search to see how to solve your problem.

You just need to stir and stir and stay on a low heat once it is back together remove form the heat and finish it up
