Yep! I really do can french fries - skins and all! LOL!



These are quart jars from two years ago. I've found, though, that for just my hubby and me, a wide mouth pint jar holds plenty.

Michele - I have NO idea why or how they're canning them with no water, but I assure you, if you do it with water, there will be no waste. The water in the jar contains all sorts of potato starch, so when you used the drained liquid, it is excellent as a water or milk substitute when making bread! Also, I know you can dehydrate the solids in the liquid and make potato starch. I'm just not that good. LOL!

Try it, girls! You'll never go back to frozen again! I swear! They are perfect for frying - any way you choose to fry them! Just make sure to pat them dry very well. Other than that - YUM!!!

Not canning today but getting ready, so when it's time everything is ready to go. My sister will be selling her farm and moving to Paris sometime this year. She is cleaning out the closet in the goat shed where she keeps her canning jars. Over the years she has collected hundreds of all sizes. She gave me 24 regular mouth pints and 3 wide mouth 1/2 gal. I've washed them and they are drying on my counter. The pints I'll put to good use in canning broths. The 1/2 gals will be for storage.

Going to try to can pepper jam today for Christmas gifts. It has just been interruption after interruption all morning. But Im going to try!!!

Sara I hope your sister is close by. Nice to get all those jars too. Everything is in such short supply, or so they say. Nini if I have left over jars I will give canning french fries a try. How did the pepper jam turn out? Tomatoes are on my list for the weekend. I have today off, so a long weekend for me. Lisa good thing your a jar hoarder! lol hope you hoard lids as well.

Denise, Paris is a town of 22,000. I live in the southeast part of town and so does Bobbie, Betty's twin sister so Betty is looking for a house near us.

Michelle your tomatoes just keep on coming. Happy canning.

Lisa the only places I ever wanted to visit across the pond were England and Ireland. In one of our parks there's a 20' Eiffel Tower with a red cowboy hat on top. It has become the town's logo and you see pictures and small ones everywhere in town.

Nina, I told Betty about you canning French fries and she said she might give it a try when she is settled in Paris.

Oh my, Michelle you are really on a tomato canning roll. Good job. Any idea how many pounds of tomatoes your garden produced.

Later part of next week is forecasted to be in the 70s so canning is on my calendar.

More tomatoes for me too. Have about 15 quarts whole and pureed, 8 quarts salsa, and about 15 or 20 more to do.
Also going to make some kind of canned pickles from my gigantic Armenian cukes. I don't like to ferment them in pieces, I prefer the smaller ones, so I will can these hulks!
We are set to get a quarter side of beef this week, and I found, by surprise! about 15 packs of ground beef from our prior quarter. I think I am going to make a batch of Skyline chili to can. (AKA Cincinnati chili)
Michele, sounds like you have had a bumper crop.
GLad to see your temps are dropping too Sara. Our weather is gorgeous here, high 70s and no humidity.

Lisa, what's the difference between Cincinnati chili and Texas chili.

Hope to make and can bison chili when Aldi has bison back in stock.

Cincinnati chili is actually Greek in origin. It has chocolate and cinnamon (just a bit), and bay to give it a different flavor. The next time I'm at the store, I will get you a pack of the mix. Really easy to make, you take the mix, a can of tomato paste, a lb of ground beef, and water. It is served as plain chili, a 2 way (chili/spaghetti), 3 way (2 way plus cheese), 4 way (cheese onion) and 5 way (cheese onion, beans) It is usually served with oyster crackers and a bottle of hot sauce.
People love it or hate it. Also served over hot dogs, cheese coney. Being from Cincinnati originally, I grew up with it, and am in the love category.

By the way, I couldn't help but think of you and your sisters as the gals that were featured in your little mini mysteries you used to write. I just loved those. Especially that they always ate black cherry ice cream!!!!

Pearl and the girls are still eating black cherry ice cream and drinking Merlot with it. Working on a new story.

Thanks Lisa, I've eaten Mexican chili with chocolate and cinnamon. Like scotch it's an acquired taste and I did like it but nothing beats a bowl of Texas chili.

You girls are making me crave chili!!!

The pepper jam came out excellent, Sara. I am so very pleased with it. My cousin said she would like to make some with me to give as gifts this year, too! I told her we should make homemade crackers to go with them!!!

I canned up 3 pints of leftover pulled pork from dinner tonight. Oh my gosh, so good. I used my citrus tea along with BBQ sauce and a few other ingredients and slow cooked it for over 12 hours.. It was incredible! I served it on buttery toasted rolls. My husband had THREE sandwiches!!! LOL!!!

Got up at 4:30 a.m. and have 4 pints of eye of the goat dried beans in pressure canner. Feels so good to be canning again.

4 pints of chicken broth w/ semi-dry sherry in pressure canner. I like to use chicken broth w/ semi-dry sherry in mushroom recipes.

This week I have peppers coming in like crazy here in SoCal, so I have been making pickled carrots and jalapeno peppers, cowboy candy and hot sauce with Serrano peppers. Bell peppers have been sliced, bagged and put into the freezer. To mellow things out a bit I also made apple butter yesterday. The week before my tomatoes peeked in ripeness, so I made and canned marinara sauce, along with chicken broth. This week I also planted my garden with a second round of leafy vegetables, root vegetables, zucchini and winter squash.
