Sorry girls...I haven't changed the date in over a week. Forgive me! I was traveling to Texas to see my family. Up at my dad's ranch, we didn't even have cell service let alone internet! I'm home. Making hamburgers on the grill with some grass-fed meat, organic buns from Whole Foods, and homemade oven fries. Hugs! Missed you all!

I'm mixing up a dry corn bread mix from scratch. I'm working on making one of our favorite sides a bit healthier.

Our corn pudding uses 2 boxes of jiffy corn mix. I'm trying a recipe from scratch to see if I can eliminate the boxed mixes. Then I have to figure out if frozen corn can replace the canned corn.

Since I don't have a vehicle to grocery shop, I dug through my cupboards and found stuff to make tuna and noodle casserole to go along with corn pudding. My freezer is pretty bare right now. I'm almost done using last year's zucchini too.

I found soup beans to rinse and soak, to make a ham bone soup tomorrow.

Grilling some chicken...gonna marinate it in lemon juice and garlic, then grill and toss with whole wheat organic pasta, fresh tomatoes, basil, garlic, olives, and olive oil with lemon juice. Maybe put some salad on the side, will see.

Kristina and Nicole, your dinners sound good!

I try to avoid mixes too Kristina. I used to use Jiffy Corn Bread mix (my mom always did :)) but my husband would never have more than one piece. A couple of years ago I tried a 'Marie Callenders' copy cat recipe and now he'll have 3 pieces :)

Tonight is:

~Grilled burgers on Cheddar Buns
~Corn on the Cob
~Tossed Salad

And I think I may make a Blackberry Cobbler :)

Wow, Nicole. That sounds so good. Tonight we had a stew of sorts which I made in the crock pot. I didn't want to go to the grocery store again, so I scoured the cabinets and fridge and made do. I had two quarts of tomatoes I'd put up last year, strained those and dumped them in along with carrots, onions, and frozen limas. An hour before that was done cooking I added in some leftover garden peas and shrimp. Of course, I seasoned liberally. Served it over brown rice with garlic bread. Hubby told me several times that it was delicious. I love easy crock pot meals.

I hear ya Alyce! I ended up with a pizza. Busy, busy day. At daughter's school twice today-once for Composting with the kids lunch for three hours, then back at the end of school for Garden Club. Lunch with DH. Taught knitting class. Whew, still tired from my trip. Pizza was good, though.

@Bella - love the phrase!

I got a new Gas Grill for Mother's Day, early as hubby will not be here for Mother's Day.
Tonight we grilled Chicken and I made potatoe salad, cole slaw and bake beans. I love barbecue.
Now I have eaten CJ's hubby's cooking, yum, yum is all I have to say, what a fabulous cook Bill is.

Tonight's another crazy night. We will have grilled chicken sandwiches on whole wheat organic buns, with lettuce, tomato, pickles and homemade honey-mustard. Serving with a side of homemade potato salad that I am making early in the day.

So my DH is home sick for the past two days. He really must be sick cause he never stays home from work! Decided to cook homemade chicken soup for him. Hopefully it ails whats making him feel so bad :(

Yum! Pizza and brownies and movies, oh my! Nicole! I wish I were there with you! ;) My son was begging for pizza tonight, too, but I was so busy I forgot about making the dough. :( Instead, we had leftover lamb, roasted potatoes and pickled beets. Not very fancy, but pretty yummy for a quickie meal! Popped the meat and potatoes in Grandma's cast iron skillet and dinner was done in no time! Easy peasy! :) Tomorrow afternoon I have a bridal shower to attend, but when I get home, I think I'll be making spinach pies (calzones). The guys will be happy!

Alyce - I hope you're feeling better!!!

Oh Nini, it was fun. An old friend visited who lives in Chicago, and one of my other friends (who also is in my Sisterhood Chapter). We munched, watch a DVD and the extras, and had a grand ol' time!

Tonight is a steak on the grill with a vegie pack of potatoes and broccoli, and garlic toast. Mmmmm!
