I am really not sure--Violet and I will be coloring eggs and my system is a bit on the "whack" so I think I'm going to take it easy and eat light. Maybe just some soup--it's chilly here, so it will probably be a good idea.

Spinach salad with tomato, mushrooms, onion, poblano pepper, yellow crookneck squash, garlic, black beans, extra sharp cheddar cheese with favorite dressing and salsa, tortilla chips. Crunchy! Yummy!!

I made a pizza, what's it called, a panbread with MJBakeover mix. I made sauce from a canned of fire-roasted tomatoes with some mashed garlic cloves, added some of my rosemary and lemon thyme (could've used more rosemary) and whirled it with my stick blender. I also went out and picked a double handful of wild greens -- false dandelion, plantain and sorrel. I chopped that up and put it on top of the sauce and then covered it all with mozzarela cheese and I have pizza of a sort. Forgot I have Ital sausage in the freezer. I also have a blackberry cobbler in the oven, too. And I made some Chillover using a Fentiman's soda.

Pretty good, considering the trouble I've been having cooking lately.

Tonight, salmon with either tomatoes and pasta, or pasta/veg with creamy tomato/horseradish sauce. And, chocolate bunny for dessert!

I've got a ham, carrot souffle, green beans, and mashed potatoes cooking in the kitchen. Yum~!!! Cinnamon rolls for dessert.

Scratch that, decided on chili instead. Couldn't find buttermilk at the store so I'm skipping the corn bread and serving it over brown rice, with cheddar cheese on top.

Nicole, you can make buttermilk yourself:

1 cup milk
1 tablespoon lemon juice or 1 tablespoon vinegar

Directions:

Combine ingredients and let stand 5 minutes.

After 5 minutes, mix together well and use as buttermilk in any recipe!


I'm in a slump with meal planning this week. I'm working on what most people call "spring" cleaning. With the seasons changing, lots of things are being put away, and summer stuff brought out. In the midst of that, I'm deep cleaning and decluttering and organizing finally. YAY!

I'm thinking an easy soup tonight or homemade Mac n' cheese.

Hubby is sick with possibly a sinus infection too.

Yesterday we ate leftovers and sandwiches.

Tonight: Stove top Tuna and Noodle Casserole with peas and carrots.

Thanks for the kind words about hubby. He's been to the doctor now and did have an infection. He's on antibiotics and they bother his stomach.

I'm using a natural remedy for allergies now. The farmer's were out in full force yesterday - dirt flying everywhere. It's so dry that the dust clouds were a constant view from my porch. I heard one at the vet say that the rain will come this weekend.

Yesterday, dinner was late. I found some chicken thigh (organic) piece on sale and cooked them up for a chicken alfredo with peas.

I did cheat on my sauce (shhh!)

Tonight it's Dutch Oven Chili - raining and cooler here today.

I'm also busy canning some jellies.

We ended up grilling out yesterday - ribs and burgers.

Not sure tonight, but most likely my chili tomorrow. Maybe leftovers tonight. I'm in a funk and lack the energy. I need to sip some energizing tea on the porch to "re-charge."
