Today I put up two 1/2 pint jars of three roasted bell peppers - red, orange, & yellow - in EVOO with fresh rosemary. As long as they stay covered with oil the peppers will last for a year in a cool dry place. If kitchen is too warm put in fridge.

Winnie, I made them to put on toasted flatbread with cooked Italian sausage or over pasta. Your idea of with meat dish sounds good too.

Sara, I have never tried this method of preserving peppers, but I like the idea of it being in EVOO with fresh herbs. I bet they are delicious on a salad or with a meat dish.

Dawn, this is the first time I'm tried preserving peppers in oil. I would think it would work on any pepper. A smaller pepper like a jalapeno would probably take less roasting time. For smaller peppers I suggest cut them open on one side; leave whole; remove seeds; and flatten out to roast. The next time I do it I will cut bell peppers into 4 pieces. I think they would peel easier and then I can cut into thinner slices if I need for a recipe.

Gail here's the recipe.

Wash, dry, core & remove seeds.
Slice lengthwise.

Put in ovenproof dish and drizzle with EVOO.
Roast for 45 min at 350.

When cool take skin off.

Put peppers in sterilized jars; cover with EVOO; add herb if desired; remove bubbles.

Put lid on; store in a dark,cool, dry place or in fridge; no direct sunlight; and shake jar everyday or so. Ready to use after 3 days - longer if you want a richer flavor.

Let us know how it turns out.

Note: I forgot to line the cookie sheet with parchment paper and I had a mess to clean up.
