Dawn is too kind, I am no expert in making cinnamon rolls. I have made alot of pans of them though. My favorite to make right now is Overnight Carmel Pecan Rolls. This makes two cake pans. You can divide them up even smaller pans if you want, or cut the recipe in half. I usually substitute walnuts as pecans are expensive right now. I have put a pan in the freezer, and baked later, and it works out just fine. Let it thaw in the fridge or on the counter and rise a bit. Mix this recipe up like you would any bread.
2 pkg yeast, or 2 tablespoons 1/2 cup warm water 1/3 cup sugar 1/3 cup of oil 3 teaspoons baking powder 2 teaspoons salt 1 egg 6 1/2-7 1/2 flour 2 cups scalded milk
Mix yeast into warm water, mix in sugar and oil. Let sit till gets bubbly Add milk, salt, egg, some flour and baking powder in bowl. Add in yeast. Knead till smooth, about 10 min. Let rise till double, 1-1/2 hours. Melt topping- 1 cup butter 2 tablespoons corn syrup divide into 2 cake pans, sprinkle with 1 cup of nuts.
Divide dough in half, and roll out each half. 12x10 or so spread with 2 tablespoons butter, sprinkle with 1/2 cup of sugar, and a couple teaspoons of cinnamon. Roll up and pinch to seal. Cut into 12 slices, and lay in pan. repeat with other half of dough.
cover with foil or lid and refrigerate for at least 12 hours. In morning uncover and bake at 350 for 30-35 min or until done. Invert pan onto cookies sheet and enjoy.

Oh wow Michele! That sounds so delish! I, like Sara, am not a great baker, although I have ventured into the sourdough world. Maybe I will try these on one of our extra cold weekend mornings. |

Overnight cinnamon rolls take me back to when I was in high school. My first job was washing dishes, by hand, at our local diner. The owner, who also cooked, would slather butter on trays before closing, sprinkle brown sugar over it and pour several little containers of creamer on top. The he'd place frozen cinnamon rolls on the pans, cover them and they'd rise overnight. There was nothing better than those warm rolls covered with icing. Of course that was when I was so active I could eat anything.

I like having these for holidays, or anytime in between lol. The ease of just throwing them in the oven in the morning is what I like best.
