I cut off a few bits of Ivy from my big plant, trying to see
if they will grow in the water. or will they just give up?

Nancy Jo, they WILL acquire roots!! I've regrown many ivy cuttings as well as Christmas cacti!! Also tons of spider and snake plants!! I've got some ivy cuttings I just started! All the best to you and happy dividing and growing!! Gorgeous vase!!
