Ok, so has anyone made banana peel bacon? Apparently, it is a thing. You take banana peels, scrape out the pulp, and marinate in soy, Worcestershire, garlic powder, onion powder paprika, brown sugar or maple syrup and a bit of oil. Kind of like a rib marinade. Then fry in oil or do in the air fryer. I bought some more bananas today, since the ones I had had brown peels. Going to try soon. Organic would be best of course, because bananas are laden with pesticides. |

Lisa, seeing I just bought 2 1/2 lbs of bacon it may be a while before I give it a try. Come to think of it I probably won't do it but am interested to hear how you like it.

Good luck Lisa. I am with Sara, don't think I would try it, but let us know what you think!! For me today will be butter making, along with bread. I think I will pass on making cheese today. My family always makes danish coffee cake for Easter, having a little show and tell with pictures in a text messages. I will put together an egg casserole too, for breakfast tomorrow. Will be making punch and dessert for Easter dinner at my ma and dads.

I would totally try banana peel bacon, just for the novelty of it if nothing else. I love trying different things! Lisa, you will have to let us know how it comes out if you try it!

Made up a good breakfast this morning. Home grown and smoked bacon, fresh eggs from the hens, home made bread, and canned apple juice from our trees. Enjoying the fruits of our labor for sure.

It was a perfect start Debbie. This morning, I had a pan of leftover cinnamon rolls in the freezer. Got them out last night and just need to add some frosting.

Friday fish fry- Home grown french frys, and breaded pan fish, cooked in the dutch ovens over a fire outside. The only way to go, as no mess or oil smell in the house. Boy it was good.

That sounds great Michele! I have never mastered frying fish. I had fried zucchini patties last night and the smell is lingering. I made them mixed with rice and the texture was nice, very crispy! |

Sounds like a good way to use up zucchini! Crispy is always good. Sometimes it helps to burn a candle to get rid of smoke or oil smell.

I think I will try making Zucchini patties my garden gave me some great zucchinis so far this year.. Thank you for a great idea.

We have had so many mangoes given to us lately. Everyone's trees have been loaded this summer. Anyway, I have been slicing them up and freezing as many as I can because they always seem to ripen at the same time. I made a Mango White Chocolate Cheesecake on the weekend for a BBQ at our friend's place. Yum!!

Here's the recipe for my Mango Ripple & White Chocolate Cheesecake. To be honest, you could use almost any fruit instead of mango. The Arnott's Granita biscuits are an Australian brand. You could substitute any shortbread cookie or even Gingernut cookies if you like.
Mango Ripple & White Chocolate Cheesecake • 300g Arnott’s Granita biscuits • 100g butter, melted • 2 mangoes, stoned, peeled • 500g cream cheese, softened • 1/2 cup (120g) sour cream • 1/2 cup (110g) caster sugar • 2 Free Range Eggs • 200g white chocolate, melted
Method 1. Preheat oven to 150°C. Grease and line the base and side of a 20cm round (base measurement) springform pan with baking paper. 2. Place biscuits in a food processor and process until finely crushed. Add butter and process until well combined. Spoon into the prepared pan and use a straight-sided glass to spread and press over the base and side. Place in the fridge for 30 mins to chill. 3. Meanwhile, place the mango in a clean food processor and process until smooth. Strain through a fine sieve. 4. Place cream cheese, sour cream and sugar in a clean food processor. Process until smooth. Add the eggs and process until smooth. Add the chocolate and process until smooth. Add half the mango puree and process until smooth. 5. Pour half the cream cheese mixture into the chilled crust in the prepared pan. Drizzle with half the remaining mango puree and gently marble with a spoon. Pour over the remaining cream cheese mixture and marble with the remaining mango puree. 6. Place the pan on a large baking tray. Bake for 1 hour or until almost set. Turn oven off. Cool in oven, with door ajar, for 1 hour. Place in the fridge for 3 hours to chill. Transfer to a serving plate and cut into wedges to serve. Serve with whipped cream and thinly sliced mango.

 I read about Hagelslag somewhere and decided to make it this evening. It is buttered toast with sprinkles. All I had were Halloween sprinkles, but it was surprisingly delicious. In Australia they call it Fairy toast.

Yes, Vanessa! We call it "Fairy Bread". We just use white bread (not usually toasted), lathered in butter & sprinkled with "hundreds & thousands" (which is what we call sprinkles). For some reason, it always had to be cut into triangles when I was a kid. It's extremely unhealthy but, as a kid, it was the best party treat ever!!
