This week I have been digging out some of my favourite autumn recipes. Here are some Gluten-Free Apple-Cinnamon Muffins with a Crumble topping.

As per request, here is the recipe for my Gluten-Free Apple-Cinnamon Muffins with a Crumble Topping:-
1 1/2 cups applesauce 1/3 cup melted butter 2 eggs 1/2 cup granulated sugar 1 tsp vanilla 1 pinch salt 1 1/2 cups gluten-free all-purpose flour 1/4 tsp xanthan gum 1 tsp baking soda 1/2 tsp baking powder 1 tbsp ground cinnamon (or I suppose you could use Pumpkin Spice if you like)
Crumble Topping 1/4 cup brown sugar 1/2 tsp cinnamon 1/3 cup gluten-free all-purpose flour 2 tbsp melted butter
Pre-heat oven to 350F. Grease and line muffin tray. Combine applesauce, melted butter and eggs in a large bowl. Stir in granulated sugar, salt and vanilla. Stir in flour, baking soda, baking powder, cinnamon and xanthan gum. Mix until all the ingredients are smooth and fully combined. Spoon batter into muffin tray. For the crumble topping:- add all ingredients together in a small bowl. Stir until ingredients look thick and crumbly. Sprinkle on top of the muffins. Bake for 20 minutes, or until a toothpick inserted into the centre comes out clean. Enjoy!

Thanks Cindy, I printed it out. Ordered King Arthur All Purpose Gluten Free Flour to be delivered this coming week so I will be all set except for the xanthan gum. I've never used it so will have to order it. What else is it used for?

Hi Sara - just take a look at your Gluten-free All-purpose flour before you purchase the Xanthan Gum. Some gluten free flours may already have it added, so you won't need to buy it. I know "Bob's Red Mill Gluten Free 1 to 1 Baking Flour" already has it added, however, the "Bob's Red Mill Gluten Free All-Purpose Baking Flour" does not. Just check the packaging first. Basically Xanthan Gum helps add some stickiness to the batter, helping to bind the flour since there is no gluten present. I have done plenty of GF baking without it, the result may just be a little crumbly and perhaps drier without it.

In keeping with my "fall" theme in the kitchen, I decided to make some "Mulled Apple Cider". This version is non-alcoholic, but I'm sure you could add your favourite brandy or rum if you wanted to. It has cinnamon sticks, whole cloves, allspice, nutmeg, cardamon and sliced oranges. I think I'll try adding star anise next time. I used 2 quarts of organic, unfiltered apple juice and didn't need to add any other sweeteners.

Thanks Cindy, I checked my flours, and the Measure for Measure Flour has it and the all-purpose does not.

Tried the burrito in a jar that I canned a couple weeks ago. Pretty darn good, with fresh made tortillas. Will make some more. It is nice to have an instant meal.

Got a pot of beef bone broth cooked up yesterday. Will be canning that up this morning after milking. Thanks Sara for the great canning book. Took 3 days off of work to visit with my sister and get a few things done.

I'm happy you are using it, Michelle. I finally got a chance to use my new electric pressure cooker yesterday. Between the heat & MS fatigue it's hard for me to find a day I can get out to my Yellow Rose Cottage to can. Mornings are cooler now so I will have more good days.
Yesterday I canned 6 pints of pinto beans. Must say there will be a little bit of a learning curve for me on the digital part of the electric pressure canner. Hopefully next time it will be a smoother experience.
All sealed but one. Have no idea what went wrong on that one. Like my sister says, "when it comes to why some lids seal, and some do not 'who knows' it's just part of canning. |

Debbie, Burrito in a jar is...... dry pinto beans, rice, hamburger, onion, green pepper, and taco seasonings. All in a quart jar and pressure canned.
Sara I follow the directions on the "cheat sheet" Pressure on one side and water bath on the other. I had issues, with not putting the green lock on correctly, duh issues, I tell you. There are you tube videos to watch too to help. Or email me too!! I hope you like it. Glad your feeling better.

I have chicken backs and necks simmering on the stove this morning. Making chicken stock. A round steak is thawing. Will try canning beef tips and gravy with it. My trial run to see if tough cuts of beef will be tender. Actually I am trying to get my freezer cleaned out a bit to make room for beef the end of the month. This weekend is apple pressing time. Have some apples, so instead of wasting will do a batch or two of fresh cider.

Oh, my Michelle you sure do keep your kitchen busy. Let me know how the beef tips with gravy turns out. It's one of the recipes I want to try when I feel more confident with the electric pressure canner.
Thinking about canning black beans today but here I still sit just thinking about it.

Michelle - The beef tips will probably be tender. We want very tender meat so we cook it in the Instant Pot and it falls apart with a fork it is so tender. Even some of the tough game DH brings home. I'm supposed to be cleaning out the freezer for approaching hunting season. I got some of the shaved beef that Trader Joe's has and I'm going to marinate it for teriyaki tonight.

hummm an instant pot, maybe that is what my mom needs to make meals for my dad. If the meat comes out super tender.

The instant Pot is the best appliance I've bought since the washing machine. Dh and I are toothless so very tender meat is a must. The 3 quart size is perfect for a couple.

I had two pint jars of the beef tips that did not seal. So that was supper tonight over noodles. The beef tips were actually round steak, a tougher cut of meat. They were tender and good. Success. Instant meal in a jar. Will have to do up some more this winter when I have more time.
