With the heat wave blanketing the country we should share favorite hot weather meals. It's just too darn hot to do a lot of cooking. There's always salads, but we can't eat lettuce so we have to get more creative. Curried rice salad with chicken or shrimp or maybe use orzo or kasha instead of rice. When I cook a whole chicken I like to set aside some of it in the freezer to use for a last minute meal or sometime (like today) when I don't feel like cooking. It's 108 here today so tonight I will slice tomatoes almost through and put thin slices of meat and cheese between the slices. What are you fixing?
Don't forget the root beer floats!

We like hot dishes at our house because you can eat them for than one meal. So tonight I made a three-bean hot dish. Butter beans, kidney beans,baked beans, hamburger, bacon and celery. Cooked it in the microwave. Delicious and no heat in the kitchen.

Whole chicken cut and layed in microwave casserole dish. One can Rottela spicy tomatoes. Cover loosely with wax paper and cook for 15 min. Turn and mix pieces after 10 minutes. Let set while you microwave potatoes and serve it to the family with salad and bread or green veggies.

We don't use the microwave a lot but I like to make pasta salad with chicken added. I can cook the chicken ahead with a bit of Italian dressing and add to my normal pasta salad, That consists of cooked spirals, cubed tomatoes, green peppers, cucumbers, and black olives. Then put Italian dressing over it and you can make the salad part ahead and chill. Add the chicken (cut into to bite size pieces) right before serving.

I don't have a summer recipe for you but I will tell you how I stock my kitchen for the summer.
Freezer: Fully cooked store bought chicken tenders Cooked and flash frozen ground chuck - so I can use what I need Crockpot pork loin - single servings Home cooked chicken broth frozen in ice cube trays - kept in freezer bag
Fridge: Cottage cheese; hard cheese; soft cheese Pickles; relish Prepped veggies - celery; greens; herbs;
Panty: Can chicken; ham; Spam in single pkg Can English peas for salad Can asparagus Pork n/ Beans Home canned dried beans Home canned chicken broth Onions; garlic; potatoes Assorted pastas; 90min rice Lemons; assorted peppers Can vegetarian veg soup - I eat it out of the can like I did when a teenager.
I have MS so summers are especially hard on me, so I need easy to prepare meals on hand for the bad days. On better days I cook and prepare for the bad days. What's in my kitchen may vary from week to week - the above are my stables.

We like to make pasta salads, veggie pizza to name two. We don't eat alot when it is hot.
