Not only am I a lazy cook,,, buy a lazy baker too!
So,, I had 1 small squash that needed to be used up,, so I did what any lazy baker would do...
I pulled out a box of chocolate cake mix,,, and prepped it according to the directions on the box, less 1/8cup of the water required... then shredded up the squash, squeezed out the excess juice and added the squash to the cake mix..
I made 26 chocolate zucchini cupcakes,,,
Oh My Stars,, they turned out great and light and moist.
So easy peasy..

FYI, I always keep a box or two of chocolate cake mix on hand,, in case I need to make a quick batch of cookies.

I might have to try using a spice cake mix next time... I am really pleased with how easy it was to "throw together"...

I am a rather lazy cook too. Have you heard of the Cake Doctor books? I enjoy using them but I also make a lot of cakes and pies from scratch. Cookies too. Depends on if I am in a hurry. I love cooking in a crock pot so that I can do other work. Got a meal in right now. I like plain and simple cooking except for holidays.

I frosted some of them, and left the other half unfrosted.

I make simple cookies from a box of cake mix too.. but all I do is add 2 eggs and 1/4 cup veggi. Oil and about a 2tablespoons of water.. mix it up and spoon the batter onto a baking sheet that has been lightly misted with spray on oil.
If I. Happen to have some chocolate chips, walnuts, raisins or shredded coconuts... I toss in a handful.
Sometimes I sprinkle some sifted powder sugar, ever so lightly. Over the top of the fresh baked cookies.

Yeppers, I am all about easy least.

hey Krista,, no, I just spoon the 'batter/dough' onto a cookie baking sheet. leaving about 1 1/2" between cookies.
