Yum!! I made sourdough pancakes in my skillet the other day - you just pour the whole batter in the pan, cook fr 5 minutes, top it off in the broiler (to cook the top) for another 2 minutes, and put on the plate. So quick and easy - and delicious! I love cast iron cooking :)
I'm going to have to get this cookbook! It looks fantastic!!! We mainly use cast iron when we go camping but I have ceramic coated pieces I use in the kitchen too. AND I was so excited when DH brought home a new cast iron pan with a cool "high" cast iron top to it. He called it a chicken fryer - I call it FUN!
I made that same cornbread recipe several times from MaryJane's cookbook and it is the best recipe I have ever had. The cornbread comes out moist and light which is just plain yummy with melting butter and apple butter on top! YUM!!
