You guys have been brilliant in helping me come up with dinners that start with certain phonetic letters over the last few months, when I simply have come up empty! I need three more to wrap this year up with my son...

Y- that sounds like a long i - such as in butterfly
the a sound as in armadillo

Any ideas?????

Shannon I know you don't do jalapeno peppers - maybe you could substitute something else for the peppers.

Easy Armadillo Eggs
"A quick and easy version of this spicy Texas favorite.

Ingredients
1 (8 ounce) package cream cheese, softened
1/4 cup bacon bits
1 tablespoon chopped fresh chives
1 teaspoon hot sauce
1 pound pork sausage
1 cup shredded Cheddar cheese
1 (5.5 ounce) package seasoned coating mix
1/8 teaspoon ground cumin
1/8 teaspoon chili powder
16 fresh jalapeno peppers

Directions
1.Preheat oven to 350 degrees F (175 degrees C).

2.In a bowl, mix the cream cheese, bacon bits, chives, and hot sauce. In a separate bowl, mix the uncooked sausage and Cheddar cheese. On a flat surface, mix the seasoned coating mix, cumin, and chili powder.

3.Cut a slit lengthwise into each jalapeno pepper, and remove the seeds. Stuff the peppers with the cream cheese mixture. Press the sausage mixture around the stuffed jalapenos, and roll in the seasoned coating mix to coat.

4.Arrange the coated jalapenos on a baking sheet in a single layer. Bake 25 minutes in the preheated oven, until the sausage is evenly brown.

Note: Wear gloves when handling jalapeno or any hot chili pepper

Sara - we do jalapeños!!! Not sure why you thought we didn't. But we can't do cow milk... you think it would work if I used goat cheese???

Goat cheese should work. I must have gotten jalapenos mixed up with something else you mentioned you are allergic to.

I haven't made armadillo eggs but I have eaten them and they are so good.

I am allergic to pumpkins, beans, and cow milk (and products)... my kids are allergic to gluten. Makes cooking interesting ;)

Hey Shannon! I make a german cucumber salad that is the bomb! My Sara loves it! Just slice up cukes real thin, onions very thin, mix a little 'tofutti' sour cream or Organics Lactose free sour cream and 1/4 tsp of dill and a splash of ACV! Mix and walla-----long 'u'!!
