I want to make some candy for Christmas. Please share you tried and true candy recipes.

Hi Kem, I just made Peppermint patties a couple days ago and they're really good! Here's the recipe: 7 1/2 cups powdered sugar, sifted 1/3 cup evaporated milk 1/3 cup corn syrup 3 Tablespoons coconut oil 1/4 tsp. peppermint essential oil or 1 tsp. peppermint extract 1 1/2 lbs. bittersweet or semi-sweet baking chocolate, chopped In a large bowl beat together sugar, milk, corn syrup, coconut oil, and flavoring. Beat on low speed until combined. Shape into two round disks cover with plastic wrap and refrigerate for 30 minutes. Sprinkle counter top with a liberal amount of powdered sugar, also sprinkle top of disk. Roll out to 1/4 inch thick and use a cutter about 1 7/8 or similar. Gather up scraps and cut til used up. Repeat with second disk. Lay on a cookie sheet covered with parchment paper and freeze for 30 minutes or overnight. Melt chocolate in 1 minute increments until there only a few lumps, then stir until melted. Use a fork to dip each patty and push off onto parchment with a knife. You may sprinkle some with crushed candy cane as well. I used chocolate melting wafers, solid coconut oil, essential oil, and one of those little plastic medicine cups as a cutter. The cup was about 1 1/2 inches and I got about 80 patties. If you give them a try I hope you like them. |

Saltine toffee. Ingredients 1-1/3 sleeves of saltine crackers (Approximately 50 crackers) 1 cup butter 1 cup brown sugar, packed 2-1/4 cups chocolate chips Instructions Pre-heat the oven to 325°F. Line a medium sized cookie sheet with aluminum foil and then spray it with non-stick cooking spray. Place the saltine crackers out on the cookie sheet until it's completely covered. (If you overlap the crackers, they'll be thicker in the end) Melt the butter and sugar over medium low heat. Then bring to a boil for 3 minutes, stirring constantly. Pour the bubbly mixture evenly over the saltine crackers. If you missed any big areas use a knife to spread it out, but it should settle evenly when it bakes. Bake it at 325°F for 8 minutes. Remove the cookie sheet from the oven and then sprinkle the chocolate chips evenly on top. Return the cookie sheet to the oven for another 1 to 2 minutes to help melt the chocolate chips. Use a spatula to spread the melted chocolate evenly. Decorate with sprinkles, M&M's or chopped pecans. Place in the freezer for 30 minutes. Break it apart, or use a sharp knife to cut it into squares.

Both look good, I will give them a try.Made cake pops yesterday mixing a chocolate cake mix and a block of cream cheese. Rolled into walnut size balls and dipped in white chocolate. Very good and easy.
