I did more freezer meals this weekend too. Two 8x8 pans of Butternut Squash Lasagna, a 1/2 batch of Swedish Meatballs with Dill, a batch of Beefy Mushroom Gravy (meant to go with meatballs) and also browned about 1.5 lbs of ground beef with onion and froze that as well.
Baked and froze a couple batches of cookies and froze the shaped dough for another batch.
In the home stretch now on my fall freezer cooking plans, I can see the light at the end of the tunnel!!! |

Found a lot of chanterelle mushrooms--had about 4 meals of them fresh but the rest will have to be frozen. |

JoAnn your chanterelle mushrooms sound wonderful. There's all kinds of mushrooms and toadstools growing in my front and back yards but I'm afraid of them especially the pretty pink and orange ones. I even have had them come up in my container plants.
What other mushrooms do you forage?

Sara, We also collect shaggy manes, lobsters, coral, oyster, chicken of the woods oh heck all the good edibles: ) We have found matsutakes which are prized by Asians but with the description given by one mycologist that they smell like a cross between cinnamon candy and dirty socks I pass on them: ) You should check on mushroom clubs in your area--it's a great way to learn your mushrooms |

JoAnn I'll check around and see if there's a mushroom club near by but I doubt it. The only foraging I know of is for elderberries and poke sallet (salad.

Mmmm...chocolate mint! Love that one!
What do you use it for? I just like to smell it! Have never figured out how to use it! Other than maybe a garnish for a chocolate punch at the holidays! Or garnish on a chocolate martini or something...?
This weekend I made and froze a batch of Pioneer Woman Holiday Bacon Appetizers - where you sprinkle Parmesan on a club cracker and wrap it in 1/2 a slice of thin bacon. You cook all those little guys at 250 for 2 hours and then freeze. You just reheat in oven when you want to serve. Boy are those good! Thinking of making one more batch because I didn't end up with too many.
Also made a big batch of Mini Bacon Pinwheels - that classic where you spread herbed cream cheese on flattened, crustless bread cut into strips - you roll up the strips and wrap with raw bacon.
Got a bunch of those frozen and ready to be cooked day of serving! I have some tips on making these faster if anyone is interested - it really saves me some time!
And I did one batch of cookies - baked them, then froze.
I am so happy because I have FINALLY figured out why I've been struggling so much with my ovens. I have a double wall unit and usually use the top oven. Put the oven thermometer from the RV in it last week and come to find out it runs about 25 degrees cooler than the display says. But only at first, after a "while" it comes to true temp.
Been using the bottom oven instead and finally I feel like a baker again! Was so frustrated with how I kept burning or under cooking everything! |

Jaime, I dry chocolate mint to make chocolate mint sugar. Layer whole leaves of c.mint & sugar in a jar. I like to leave it a couple of weeks or month before using the sugar. If needed sift the sugar to remove any broken leaves. It's good sprinkled on cookies/cakes or in coco/coffee.

I have only frozen apples once - I sliced and treated them with lemon juice - the intent was to use for cobbler or pies. I think it worked okay - that was a long time ago though. I usually just can them now.
Added some more to the freezer!
6 Cheesy Garlic Bread loaf halves 2 bags of Funeral Potatoes 1 more batch of Chunky Chocolate Gob cookies (baked) 1 batch of Peanut Butter Kiss Cookie dough (will bake from frozen then add the Hershey's Kiss on top)
Just a couple more appetizers and some cookies left to go on my list! The end is in sight! Which is good because the freezers are nearly tapped out on space! |

I made macaroni & cheese using Tasha Tudor's recipe. By now y'all know I can't leave well enough alone and I tinker with recipes. I added a dash of fresh grated nutmeg and 1/8 tsp red pepper flakes.
Divided it into 5 mini-foil loaf pans. Will bake one for supper and freeze the other four to bake as needed.

Kem, I'm sorry I just saw your question. I froze some green tomatoes to make pie, some for canning mincemeat, and some for cooking. I recently made chicken enchiladas and when sauteing the onions I decided to throw in some chopped green tomatoes too for the filling. It came out great, so I wanted to try sauteing them for other recipes as well :)

Sharon, sounds good. I had a bunch of green tomatoes, but ended up letting them ripen and just using them. What was over ripe I fed to my chickens. |

I bought fresh green beans on sale yesterday. Today I roasted them with OO and MJF Indian blend. Will have a serving for supper and flash freeze the rest to be put up in individual servings.

Made a big pot of vegetable soup. Froze four individual servings. Five individual servings in fridge for next week.

Today I'm flash freezing three pkg of thick sliced bacon in individual servings. The bacon was in marked down bin for $2.99 a pkg - sell by date 1/7. Bacon is so high now I only buy it on sale.

I buy bacon on sale too! Or I'll get 10 lbs worth - to get a good price break - at our butcher. Then I portion it out and freeze. Still have 1 or 2 bags left from last time I did that but I think they are buried at the bottom of the chest freezer!
Right now I am working on using up all the freezer meals I made in Sept/Oct. Also weeding out any items from earlier in the year that need to just be tossed - not too much of that thankfully! |

Jaime, I only have the freezer in fridge but things still get lost in the back. I try to rotate the pkgs around but there's always that one that gets lost in the shuffle.

The next couple of days after grocery shopping day is cooking and freezing at my house. Today it's leg of lamb and rump roast. Will have a meal off each and the rest will be cut into cubes for stews, flashed frozen and put into zip-lock bags. Separately freezing the broth from each to use in stews.
For supper I will cook 1 lamb chop to doneness and 3 partially done to freeze. Also have one lb of deli chicken tenders to flash freeze. Tomorrow it's a lg pkg of assorted pork chops to cook in different ways to freeze. And 1 pk of ground Angus beef chuck to sauté and flash freeze for spa sauces, pizzas, and potato skins. My freezer will be well stocked for the month.

21 Bar-B-Q chicken sliders. I'm flash freezing them now. I bought a rotisserie chicken on sale and diced it. Added homemade Bar-B-Q sauce and put on hotdog buns. Saw hotdog buns for sliders on cooking show. Three sliders out of one bun. Used one heaping Tsp of chicken for each slider.
The chicken on sale was $5.98 and the buns were $1.29. I had all ingredients for sauce. A pkg of six deli sliders is over five dollars so I roughly saved $10 and I have a whole month of quick lunches and snacks.
