I have 3 dear friends who luv having chickens,,, and I am also the recipient of their extra eggs,,, but oh my stars! I just know my cholesterol is gonna spike at this rate!
we get anywhere from 1-2 dozen weekly..
now that being said,, some eggs are barely an inch while most are 2" in size...
So my 3-egg omelets take about 5 eggs! lol!


I trade my friends lavender buds for their hens and they get the best tasting eggs and very happy hens...

Beautiful eggs! Enjoy and make lots of chiffon cakes! Good luck on finding homes for some of those eggs. So glad your hens are happy.

Wow, what a bounty of beautiful eggs!! You could open a bakery with all of those!! LOL!! Maybe you can make loaf cakes for Christmas and put them in the Freezer for later.

I have two neighbors who have chickens and I get my eggs from either of them. They are the best!

Gracie,
Somewhere I read that eggs from chickens that are truly free-range have less cholesterol. Supposedly it's because of the free range food they eat as opposed to commercial chicken feed. Hope it's true!

I really should bake tons of cookies and cakes,, but it is tooo stinkin' hot to turn the oven on... so I guess omeletes and egg salad will be on the menu for awhile! lol!

Have you read Lucie Amundson's book, "Locally Laid"? It is quite eye opening about mid-sized organic farming in America. Her sense of humor and details about starting up a pasture raised, organic egg farm is really excellent and informative.

I was told by a friend to add a tad/wee bit of curry to my egg salad,,, really kicks it up a notch... gonna have to try that too!
