We have always thrown away the first eggs that a hen produces. Someone asked me why. I don't know the answer except mom always did. Do you use the small eggs that a new layer lays?

Barb, congratulations on your first eggs. I have not heard of not eating the first eggs. When my girls began to lay I ate the first ones.
And now that I don't have chickens anymore I can't seem to bear to eat the last five I have in the fridge. So today I will hard boiled them and mummify them. Will put them out in the Yellow Rose Cottage so I don't have to smell the process. I have mummified eggs before and kept them for a couple of years in my grandmother's wooden bowl before they began to explode.

pullet eggs- we have always used them. they are so cute. I don't use the small eggs that are just whites. you get them when the hen is done laying. that is what i was always told anyways.
