I just picked about 6 lbs. of beautiful strawberries that I hope to make into jam for holiday gifts (thinking ahead). Does anyone have a suggestion for making really good strawberry jam? For example, do you add any spice, juice, or other flavoring to enhance the berry flavors? Thanks

I have no recipe but comments from my new canning book "Preserving Italy" by Domenica Marchetti.
The author talked about the time she used frozen strawberries instead of fresh. She used no pectin. Did use vanilla sugar*; orange & lemon zest. She followed a simple recipe for fresh strawberries.
*Vanilla sugar: Bury vanilla beans in sugar. For more intense vanilla flavor slit the bean lengthwise. Beans may be used in recipes - washed & dried - put back into sugar. That's the way women have done it for centuries.
The jelly & jam recipes I have read from this book all use vanilla sugar.
