Here's a great "Christmas cookie" recipe just in time for another weekend of baking for some of you Farmgirls out there. I made this shortbread for the Urban Farmgirls Chapter Cookie Exchange this week and couldn't resist sharing this recipe with y'all. (I can't resist eating them when they're in my house either!) It's remarkably easy to make, but looks like you spent a lot of time on it. These would totally sell for $1.95 each in a Starbuck's!

Ladies, I present to you, Heaven in a Cookie:

MOCHA SHORTBREAD
Yield: 25 squares or 50 triangles
Prep: 15 min., bake: 20 min., cool: 30 min.

* 1 1/4 cups all-purpose flour
* 1/2 cup powdered sugar
* 2 teaspoons instant coffee granules
* 2/3 cup butter or margarine, softened*
* 1/2 teaspoon vanilla extract
* 2 cups (12 ounces) semisweet chocolate morsels, divided
* Vanilla or coffee ice cream (optional)

Combine first 3 ingredients in a medium bowl; add butter and vanilla, and beat at low speed with an electric mixer until blended. Stir in 1 cup chocolate morsels.
Press dough into an ungreased 9-inch square pan; prick dough with a fork.
Bake at 325° for 20 minutes or until lightly browned. Sprinkle remaining cup of morsels over top, and spread to cover as it melts. Cut shortbread into 25 (about 1 3/4-inch) squares; cut each square into 2 triangles if desired. Let cool 30 minutes in pan before removing. Serve with ice cream, if desired.

How can these cookies miss? Coffee and chocolate together in a shortbread!
I am going to make these, most definitely, thank you and thanks for the update on your groups activities, sounds like fun!

I made these on Sunday, mmmmmmm!, very good and so easy! Sometimes I wonder why things like these cookies, cheesecake, truffles are actually quite easy to make, and easier to eat? I mean they are so tempting, now I love soups, salads etc., but they just don't call out as often if they are in the refrigerator as oh, lets say a cheesecake does! LOL!
Thank you for the recipe, a definite one to keep and make again.
