Today I stopped at the used book store and found the neatest cookbook. Laurel's Kitchen : A Handbook for Vegetarian Cookery & Nutrition by Laurel RObertson, Carol Flinders & Bronwen Godfrey. It is packed full of great recipes. I am not a vegetarian but want to cut down on meat and eat healthier but tasty food. This book has a ton of awesome soup recipes which I love. Also homemade ketchup and many different sauces. I love the peanut butter spread which is full of nuts and fruit.

Favorite Peanut Butter Spread

1/4 cup toasted sunflower or sesame seeds, preferably ground
1 cup peanut butter
1/2 cup raisins, chopped dates, or other dried fruit
dash salt
2 TBL honey (can substitute applesauce)

Mix all ingredients.

Mmmm, I remember this one! Laurel's Kitchen has been around a good many years, and is a wonderful book. You'll enjoy it.

It says it is from 1976 so 30 years. But it is the same today, good wholesome food will always be the right choice.

This is hands down one of my favorite cookbooks, and I have way to many!
This one I use, and my poor copy is battered (The split-pea and parmesan spread is very good).I purchased it in probably 1979,or so at the local Food Co-op. I love reading the part about cooking as well as the recipes,there is also a Laurel's Kitchen Bread Book, and a book that is just the recipes from her first book (That ones, spine is broken and has splatters etc. on it, can't make the caponata in there often enough!) Have fun, the recipes turn out!

Yes, I had the bread book! Wonder where it went? I used that cookbook so often so many years ago . . . . hmm . . . off to hunt . . . . . . .
