Hi farmgirls,
It's winter and chilly and cold in parts of our world. I thought I'd share this recipe for yummy, hearty oatmeal using steel cut oats. I had kind of forgotten about it until Christmas and decided to make it for breakfast while my daughter and SIL were here. It's a nice break from traditional oatmeal (which I'm getting kinda tired of!)

CROCKPOT STEEL CUT OATMEAL

4 cups milk (I use 2 cups milk and 2 cups water)
2 cups steel cut oats
1/2 tsp. salt
1 tsp cinnamon
1/4 c. brown sugar
2 c. chopped apple
1 c. raisins (could use dried cranberries or a mix of both)
1/2-3/4 c. finely chopped walnuts
2 tblsp, melted butter

Spray crockpot with cooking spray. Combine all ingredients in crockpot, stir well, cover and cook**

**Note: time and temp all depends on your crockpot. I cook mine overnight on low, but generally add about 1/2-3/4 c. more water in early morning to keep it from cooking too dry.

We just spoon into a bowl, pour over a little fresh cream and enjoy!

Sounds yummy CeeJay, but do you know how long it one take one person like me to eat that much oatmeal. lol

Sara,
You could do 1/2 a recipe and it would probably give you 3-4 servings. It keeps well in the fridge.

CeeJay the older I get the less I like leftovers and oatmeal is right on top of the list. I like oatmeal ~ I just don't eat it often and when I do it will more than likely be for supper and not breakfast.

I have grandbabies staying for the weekend later this month. I think I will try it then. I love oatmeal but my husband isn't a fan. Evidently if it doesn't involve eggs and meat, it isn't breakfast ;). Thanks for posting!

I love doing this method for steel cut oats. It is delicious and a real crowd pleaser. When my kids were younger and at home, it was a great breakfast for cold mornings and wonderful to wake up too. Now, I make steel cut oats for us about once a week but just do it on the stove top. Oatmeal for breakfast is one of my favorites!

This sounds so good! I'm a vegan and eat oatmeal quite a bit. Going to give this a try with some almond milk (I don't need the butter, either). In the summer, I make the overnight oatmeal - don't mind eating it cold but in the winter, there's nothing like hot oatmeal!

Thanks for the great recipe, CJ!

I make full batches of oatmeal often for just hubby and me, but I portion it out in some little Rubbermaid containers and freeze it. It is so nice to have the option of that delicious long-cook oatmeal any morning after just a few minutes in the microwave. I've never had to worry about how long it will last n the freezer - we go through it pretty quickly.

Thank you. I love to put brown sugar, dried cranberries and almonds in my steel cut oatmeal. I had just heard about cooking them overnight in the crock pot but wasn't sure of the "how to". :0) Because of the time to make on the stove I usually make enough for 3 or so mornings and rewarm in the microwave. Yum!

When I just use regular old-fashioned oats I just do it by the bowl full in the microwave, adding cinnamon and dried cranberries. BUT, I'm really TIRED of that right now and needed something different. So, the steel cut oatmeal helps break that monotony and they're great for winter!
