I confess, my family is a devout consumer of Mary Jane's budget mix. From the first time I made biscuits a few years ago, we've been a faithful orderer of the BULK magical powder.

Through experimentation I've made some fantastic biscuits, pancakes, and bakeovers. Alas, muffins are not my forte. The texture or moisture always gives me trouble! Any of you fantastic fellow bakers have a good budget mix muffin recipe you'd care to share?

Here's my son's favorite biscuit recipe:

2 cups budget mix
1/3 cup coconut oil
2 Tbls cold butter
1/4-1/3 cup fresh, chopped oregano
1/3-1/2 cup aromatic, hard cheese (Parmesan, Asiago, etc.)
1 cup milk

Preheat oven to 400 degrees.
Cut butter and oil into budget mix.
Mix cheese and herbs into mixture.
Make a well in the center and add milk.
Mix and drop on baking sheet covered with parchment paper.
Bake 15/18 minutes or until the edges are turning brown and they smell heavenly.

We can't wait to try your son's recipe. It has all our favorite ingredients. We make parmesan and Asiago here at the farm from our cows, Eliza Belle, Miss Daisy, and Fanci. So double yum on his recipe. And you can never go wrong combining butter and coconut oil.

I'll get with my DIL, Ashley, and we'll brainstorm some muffin ideas for you. And double yummy BTW, thank you for supporting us and buying our Budget Mix. It means a lot to us that you give us the opportunity to feed you.

Fantastic! I can't wait to see what y'all create! My husband always gets anxious when our budget mix jar gets low, asking if I've ordered a new batch yet. Haha!

Be forewarned, I'm a person who adds "a spoonful of this" and "a pinch of that'" when puttering around the kitchen, so this recipe is approximate :) You wouldn't think oregano and coconut are complementary flavors, but I really like the combination!

I just pulled a batch of raspberry-lemon Budget Mix muffins out of the oven. Yum! We'll take pictures today and post the recipe soon!

I brought a couple muffins home to give to my girls and just after I handed them over, Adria, my finicky five-year-old said "Mom, when I have these muffins in my mouth, it makes me hum. They are soooo good!". I made the recipe so it is more or less a basic muffin recipe--you can just leave out the lemon and raspberry or swap out the raspberries for other fruits. Blueberry-lemon muffins anyone? Yum!



RASPBERRY-LEMON MUFFINS
PREP TIME: 20 MINUTES
COOK TIME: 15 MINUTES
MAKES: A BAKER’S DOZEN

Raspberry-Lemon Muffins
1 1/2 cups MaryJane’s Organic Budget Mix
1/2 cup sugar
1/4 cup brown sugar
1 cup buttermilk
2 eggs
6 T melted butter
1 t vanilla extract
1 cup fresh or frozen raspberries (about 4 ozs)
1 T lemon zest (about 1 lemon)

Simple icing (optional)
1/2 cup powdered sugar
2 1/2 t milk

1. Preheat oven to 400°F. Line muffin tin with baking papers and set aside.
2. In a medium bowl, combine Budget Mix, sugar, and brown sugar; mix well.
3. In a small bowl, combine buttermilk, eggs, melted butter, and vanilla. Mix well and pour into dry mixture. Mix just until combined. Mix in raspberries and lemon zest.
4. Spoon batter into prepared muffin cups. Bake for 15 minutes or until a toothpick inserted into the center comes out clean. Cool slightly, then transfer muffins to a cooling rack to cool completely.
5. Make optional icing: Combine powdered sugar and milk in a small bowl and mix until smooth. Drizzle over muffins and let dry completely.

I'm happy to report that this recipe is delicious with MaryJane's Gluten-free Budget Mix! The conversion is simple, just swap the 1 1/2 cups Budget Mix with 1 cup Gluten-free Budget Mix. After spooning the batter into muffin cups, let them hang out for about 15 minutes before baking (this gives the flour time to absorb liquid). The yield and bake times are still the same.
